Just a few questions, because I really dig the idea of this, and while I pretty well suck at using Emacs, I think this would be fun to play with.
Would you want narration or some sort of audio track? My impulse is to never actually speak, write narration as code comments, and play chill music in the background.
Do you have a preference on content? For instance, would you rather see someone writing a paper in org-mode, scripting graphs in Python, or working on a webapp in JS? Of course, there's also Elisp or just browsing the Emacs source.
Are there are QOL or eye candy add-ons you'd want to see? I can see neotree with all-the-icons and solarized or zenburn as the backdrop or just a clean Spacemacs/Doom/Prelude installation as being nice, although I'd avoid the former two because I don't really mess with evil. I use bitmap fonts because my screen is relatively low resolution, but I can probably get used to something like Inconsolata.
Edit: just saw what you said in your original post. So are you looking for emacs -q videos or just something with the default keybinds?
Edit edit: would screenkey (https://www.thregr.org/~wavexx/software/screenkey/) or just an enlarged mode line be better for watching keystrokes?
