Good games take a long time to produce, and Godot has only recently started to really get popular. I'm sure we'll soon see high quality big projects being created with it in the next couple years. However, there are already a few decent games that were created with it, such as:

Correct. If they have engine.cfg
in their root directory you'll need 2.1 to edit them, but you can usually find a direct download link to play them elsewhere. For example Tanks of Freedom is available on itch.io.
Maybe because Godot is still new and changes to the engine happen too frequently for developers' liking? Documentation is incomplete as well. Also, 3D performance in versions below 3.0 is pretty sluggish.
Tanks of Freedom (free + open source) looks pretty complete for a Godot game. You can even download it from F-Droid.

The iOS port of Deponia does, though the PC versions use the Visionaire Studio engine, I believe.
Godot was also used for The Interactive Adventures of Dog Mendonça and Pizzaboy, as well as Tanks of Freedom. :)
