I think Yoshimi is a good candidate. It has nearly a billion voices. And you can program pitch bend and auto bend.
Runs on Linux so if you have an old pc you could use it as synth. Very powerful.

For this week, I used a Raspberry Pi as an external synth: MIDI was routed to a Raspberry Pi 2 that was running Yoshimi. The sound quality is not the best, but I wanted do experiment using some Linux VSTs.
I am more looking into hardware, or a combination of midi hardware and software.
I already have bristol installed and it is some amazing piece of software. But the problem with software is that I don't have any real knobs and keys to use with my hands and I get bored pretty fast, with 'hardware' it seems I just can't stop experimenting.
I can also recommend Yoshimi (a successor to ZynAddSubFX).
As for the 808, is there an alternative program/plugin for linux? I can use vst plugins if it really has to, but it's such a hassle.

I love Zynaddsubfx, best softsynth for linux in my opinion. There is a project based on Zynaddsubfx named yoshimi, which tries to combine the original synthesis engines with better ALSA and Jack connectivity.
