No, you can't adjust anything beyond brightness and color temperature on an iPhone, maybe if you jailbreak your phone you could mess with extra settings.. contrast, saturation, or gamma (just found that since iOS 7 you can a change the white point and darken colours via toggle switch, not fine adjustment). So iPhone color is more consistent, users can't really mess up their settings that much.
You can't change settings beyond brightness and maybe color temperature on Android either unless you root your phone, there's an app for rooted custom kernel Nexus phones that allows advanced color adjustment but that's about it.
It's a shame as some android manufacturers mess with the color and gamma settings after they receive screens from OEMs, you end up with a pretty looking showroom picture but very unrealistic colors.
