I also should have mentioned I switched to an Android phone since.
I run CaroO Pro, but there's a ton of apps out there. I installed an ELM327 Bluetooth Dongle behind my radio that connects to the phone, so CaroO displays all my engine stats (Coolant temp, battery, rpm, DTCs etc) on the main screen while recording video in the background.
Has auto start, auto stop functions, accelerometer for sudden impact record saving.
I just modified a GoPro mount to stick my phone to the windshield.
I use Caroo Pro. Discrete cam and audio. Links nicely to my bluetooth OBD dongle for enhanced stats. Gets flaky with simultaneous nav, but I have cheap phones.

I like caroo, but yes IMO, apps and a proper cellphone mount (ibolt) are the most frugal and handy choice. I've been using it for 8 months consistently.

Unless I've grossly misunderstood what you mean, this is definitely not true. There are multiple dashcam apps for Android that work in exactly this way -- CaroO Pro, for example, records in a circular buffer if you ask it to, and DailyRoads has one-touch video retention.
I've used a lot of dash cam apps for the past three years or so on an old phone and always come back to this for. I can certainly vouch for this app.
There's a free version but I'm using the paid version. I'm not sure what the differences are.
