Collibo I like it for the seperation of categories, but it's also a little slow at updating new releases such as certain monster hunter ones
There is an Amiibo collecteor's app in the Google Play Store (Not sure about the App Store) Has all Amiibo released (even cards and Japanese Amiibo) up to Pearl and Marina.
I've been using an app on my phone and it's been kept up to date properly and it has an option to track all the amiibo cards separately rather than just marking the entire set as owned. :)

Edit: I do wish that it supported Target, Toys R' Us, Gamestop, and Walmart. If it did I would have no issue with paying for it. $1.29/mo is totally worth though if the stock change gets you a cheaper amiibo.

I'll try amiibuddy because it looks to do what I want. I don't mind spending money in the play store with all the survey money I get through opinions :P THANKS A TON!

This is an app that has all the amiibos and you can keep track on the ones you have.
