Yeah, it should work fine, although I've only tested it with a DisplayLink dock and not a standalone adapter.
Note that you'll need the DisplayLink Desktop app installed as well in order for it to work.
This Kensington dock is the one that I can confirm works with the N9 (and should work with the Pixel C). Theoretically anything that uses the DisplayLink standard should work though if you can find a cheaper dock.
You'll also want a USB-C male to USB-A female adapter that's at least USB 3.0 (a 2.0 one won't give you the performance you need for video).
Finally, you'll need the DisplayLink app.
This version of the app will mirror on multiple displays (although as it's mirrored there's no real advantage), ethernet currently doesn't work. It'll be nice if in the future this can trigger a desktop mode like Samsung Dex as at the moment the size of things looks a bit daft on a big screen. I've get a reasonable amount of lag on my Note 4, it may work better with a USB3.0 phone. It's ok for the odd bit of use like presentations or occasional use if you don't have a PC.

You can use a DisplayLink adapter and it works great, the monitor just has to stay under a certain power consumption. I have a spare monitor I use when in meetings that's powered just by the USB and it is amazing.

I was under the impression that a USB C to VGA/HDMI adaptor was essentially just a GPU connected over USB, rather than, say, PCIe, but TIL!
