There are some apps for this.
Go play a twilight round, or sometime with an emptyish course.. and write it off as a junk round to get your yardages down.
Hit a few different balls/clubs on each hole and use the apps to track distances. After a round or so you'll have a pretty good average.. Also best to throw out major mis-hits.

Lets you track multiple shots from a spot, using your phones GPS.
GolfPad GPS is another good one, but i'm not sure if the free version lets you track club history.. I think it does, you just don't get stats.
Edit I generally don't account for Roll, because it can vary so much, and most of my shots to the green stop where the ball lands (soft greens).
