If you're running Android and don't mind using apps (which don't use your account in any way BTW), you could try Gym Tracker. Sync it up when you're near a gym and it'll tell you when it lost/gained Prestige, which pokemon are currently in it, which pokemon have defended the most and their IVs if you want to know that sort of thing.
Been using it for ~4 months now and not had an issue with it. I also use it for tracking Gyms I'm currently in (it'll also tell me the location so I can go back and take it back if I wanted).
I don't know if you use Android or iPhone, but an app I would recommend is Gym Tracker:
https://play.google.com/store/apps/details?id=com.foxego.gymtracker
The developer posted here in this forum to state he had approval from Niantic, so it's OK in that regard. Watch the gyms around where you live and work and concentrate on Valor gyms that are level 5 or higher. Try to get your mons in those gyms as they should be more stable and should last longer so you can get closer to 10 gyms a day. Good luck!
There's an app, too.
Checks every gym in your direct range, once per hour.
Features history (including who added a defender and when)
displays information about the defenders (IV, CP, moves).

To be honest, I gave up and ended up using Snorlax Xposed module for gym tracking (it gives notifications when your pokemon was kicked out of a gym, and where it was) but it recently broke due to a backend change so I went with my backup Gym Tracker.
Sync Gym Tracker up when you're near a gym you want to watch and it'll tell you info like prestige gained/lost, how many times each 'Mon has defended the gym etc. I just favourite all the gyms I'm currently in and refresh it once a day to see if anything changed.
Gym tracker is the only one so far that is a dedicated gym scanner. https://www.reddit.com/r/pokemongodev/comments/5m532g/gym_tracker_024_now_with_100_more_play_store/

To add new gyms, you need to be close and click the red add button. The gyms already loaded when you open the app will be the gyms scanned by users in your general location.
Same here as most others for Android. I was just browsing the play store though and came across this: https://play.google.com/store/apps/details?id=com.foxego.gymtracker
It's early access but looks very promising. You can scan and store gyms, see each Pokemon's attacks and IVs, and get notifications when prestige or ownership changes.
Not official, but very useful: https://play.google.com/store/apps/details?id=com.foxego.gymtracker
It's still in alpha so there are bugs, but it's pretty impressive.
I suppose that would help :)

Direct-link to Playstore :)
This cold be it, if I understand your request correctly.
Yeah I agree, historical gym data would be a huge help. There's been a feature request on it back in October, but there's no one that implemented it yet. I might give it a shot, but I've never coded in Python or with SQL before.
Otherwise, you could just write a script that checks the database periodically and store the results in a different database, the dashboard of Worldopole basically does that using cron, as you can see here: https://pokemonkiel.de/dashboard but it only tracks overall team prestige/number of gyms.
So if you don't want to code, your best option right now is this unreleased Android app. You'll have to manually add a gym by being nearby and then clicking the add button, but from there it'll periodically scan the gym and save a log, so you can see when and how much it lost prestige, when it gained members etc. You have no control over the duration between scans though and it can sometimes take up to an hour, allthough it seems to be scanning within 15 minutes the last few days.
On Android (only):

What you need and much more.
You can also use app like Gym Tracker while near the Gym to track it and post details from there as well.

edit: whoops, responded to the wrong person.
You could give Gym Tracker a try for notifications ;)
It's able to notify you on prestige and ownership change.
>Comparing this to football is a laughable false equivalency.
>there ARE NO TEAM BASED REWARDS
It's absolutely not a false equivalency. They're both competitive games. Yes, they're very different games, but I could say the same thing you're saying about Gyms about the team element in any game ever really. Even something like Halo. Having a team based reward for succeeding is not a requirement. Sure in professional football you can get a reward for it, but there are plenty of examples of football where you don't get any reward for winning. Hell, you even directly referenced Ingress. Ingress is a team game that gives no one team based rewards. If anything you're punished for your team winning the same way Pokémon Go is. If your team owns everything already you can't do anything unless you let it decay and then you just re-build it. If your team is already completely dominating the area, there's nothing you can do. If you're losing though you get extra XP. You get 100AP (AP=XP) per enemy portal you visit. The difference is Niantic wanted to give players a way to get coins for free (because contrary to what most people believe in this subedit, Niantic cares about keeping the game free to play, without being pay to win), and at the time of launch, gyms were the only place they could put them.
>No one really cares who owns an area
You or your friends may not care, but PLENTY of people care. I care a lot, I'm know of a lot of people who care in my area. There are tons of communities that care. Otherwise GymHuntr.com wouldn't exist. Neither would this gym tracker app exist..
>there is nothing in the app that shows team dominance unless you travel to the areas.
This I absolutely agree with. Yes Niantic needs to add scoreboards to Pokémon Go. They need to expand on the competitive side of the game. But the game is still growing into the core mechanics, the Pokémon, the balancing, the catching. Unfortunately the loudest most vocal complaints have had nothing to do with gyms though. Their priorities have been the players. From releasing the game world wide, releasing a tracker, etc. The game will grow into the team . Ingress didn't always have scoreboards either. It was over a year after the game came out we got scoreboards. And Niantic's top priority has been global release and being able to get the game stable funding. Plus the Intel map is more for field planning than for teams being able to see the scoring. The team mechanics are incomplete, but that doesn't mean it's any less of a team game. You pick a team before you're allowed to interact with gyms. I seriously can't tell the difference between trolling and stupid right now. I don't see how you could argue it's not a team mechanic. The team's existing, and the fact you can't attack your own team, is what makes it by definition a team game. If you were meant to compete against your own team, you'd be able to. Going outside the game's mechanics and "teaming up" with someone on another team for our own benefit is exploitive.
