iA Writer is a really good writing app (Markdown formatting). Recently went free. Syncs with DropBox or Drive. Can export as PDF, HTML, or Word. Dark mode. Can create folders inside of folders to organize. Really simple, clean UI.
Also shoutout to /u/Talibandito for creating Acastus. Also on Fdroid. Address lookup utility that integrates with osmAnd and maps.me. OpenStreetMaps apps suck when it comes to address searching and this app fills that niche.
What do you need?
I've been in IT for 20 years. "Word Processing" is a horrible term, as it's overly broad. Some people try to use their word processors as a DTP package. Some need mail merge functionality, or it's useless. Some simply want a spell checker and bold/underline/font size changes.
Personally, I use Google Docs. It's efficient, it works offline, but my documents are available on any device (my PC, my Chromebook, my netbook, my phone, my tablet). It's not the greatest word processor I've ever used, but its ubiquity more than makes up for that. (For the record, the best word processor I've ever used on any platform was WordPerfect 5.1 for DOS, which is sadly not coming back any time soon. Its day has passed, and we've all moved on.)
I've considered aI Writer - https://play.google.com/store/apps/details?id=net.ia.iawriter - it gets good writeups, and I could export the output to other devices via Dropbox. I can't think of anything I could do in that but not in Google Docs, but I'll be trying it soon anyway.
What you're going to get as responses will simply be statements of personal preference, rather than anything that addresses your needs. I suspect you're going to end up having to test drive multiple apps, but maybe that's what you wantred to do anyway - in which case, good luck and I hope you find something that works for you. :-)
The only setup that really works for me and is robust enough for my needs are .md files in folders for categories. I sync them in Dropbox and use Visual Studio Code to edit them on PCs and iA Writer when I need to check/edit them on Android.
I like this setup because it's future-proof (I'm not locked into any platform, can use anything to edit/sync files), easy to set up, easy to edit (I use VS Code for work so it's so much faster to edit my notes in it than in any dedicated notes app, but any text editor will work) and lets me set up note versioning with GIT.

Hey /u/bookDig - if you're after something a little bit simpler than this (just text) then do also check out IA Writer - it simply offers Markdown text with the option to sync to Dropbox or Google Drive.
I just set up syncing from Scrivener between a Windows computer and android/any other computer using Google Drive and an app. Takes a couple steps, but totally possible.
Now we have a folder full of .txts that you can edit anywhere which will sync to Scriv when you open/close Scriv. It is only capable of putting files in the Draft folder and one other one of your choice. The text editors you use to edit these files on the go are up to you but I recommend:
Takes about half hour of set up and testing to get it all working confidently, but it beats manually copy pasting and keeping track of versions.
Technically it's a writing app, but it can fulfill the basic note taking stuff. It also has a gorgeous and minimalistic design as well as a dark/night theme in the "View" Settings.

I'd love to see a writing/journaling app. Something along the lines of iA Writer, Monospace and Notebook would be awesome to see on Windows 10.
Also, something high up on my whishlist as a long-time Surface owner is an app that can compete with Paper by FiftyThree, preferrably making direct use of the Windows Ink APIs.
I think Windows 10 is really missing those intuitive, yet powerful journaling, note-taking and scribbling apps that make iOS (and even macOS) so much more fun for creatives than Windows.

IA Writer is available in the Play store and seems to work well on my Asus Flip. I have no idea how the functionality compares to the iOS app... but this, or another markdown editor like Writer+ may fit the bill.
