If you're on android check out something like Lapse It on the play store. It takes pictures at set intervals for you as described by the other reply.

Yup, I bought the pro version ($2.99?) so I could record at the full resolutions, and the exporter is pretty solid too. Also shoots in "full sensor/RAW" for what that's worth from a phone? :) Yes, I used a tripod with a little cell phone clamp. I had some weight on the pod too, but I needed more - it was about 30mph winds, hence the occasional frame movement! I'd love to try it out with a cheap motion timer or slider too...
The real benefit of this app over others that I've seen is that it is actually taking PICTURES to make the video, rather than just a video and speeding it up. This makes for better frame blending, and takes up much less space while being higher quality. I can't imagine how hot this phone would get if I let the video run for 20+min. O_O
Nothing beats lapse-it pro.
If you need total control, this is where it's at.

Your phone would need an external battery pack to maintain that kind of use, and a time-lapse app like Lapse It.
Alternatively, you could get a lifelogging device which is purpose-built for this kind of thing.
Be sure to check your local laws about photography also. If you're automatically taking photos and you go into a public bathroom, for example, that might not be allowed.
>Ok to use lapse-it Go to New Capture
>Click on the timer button and choose Stop Frame.
>Take your picture, marvel at the onion skin. Click big square stop button then back a couple of times to exit.
>And get on with your day. Tomorrow you can open the app go to gallery. Do a really long click on the picture from yesterday and a menu pops out. Chose details, Resume Capture.
>Take a picture, repeat.
Und falls das nix is', such mal im Play Store nach Onion Skin. Da wirst du ganz sicher fündig. Eventuell mit besseren/einfacheren Alternativen zu Lapse it. Viellicht Overlay Camera.
I use Lapse It Pro - for Android. You can shoot time-lapses at full sensor resolution and save the image sequence

Lapse It seems like it can do just that.
I've used this in the past but appears it's no longer being updated https://play.google.com/store/apps/details?id=com.ui.LapseIt
Lapse It is easy to use , according to my experience is the best for time lapsing
dSLR will get you great quality, but if you're on a budget, you don't want to start there for a couple of reasons: - expense - your shutter is very expensive to replace, and taking hundreds and thousands of pics for lots of timelapses is a great way to run down your camera. One day if you're doing pro quality timelapses such as for the intro to "House of Cards" or trying to get more light for star trails etc. then get a dSLR for it.
First figure out what you want to do timelapses of... Gotta smart phone? The new iPhone camera app has timelapse built in. Pretty sweet and easy. on android there are a few apps:
lapse it and framelapse both have free and paid versions. The paid versions (about $3) will allow you to have the screen off while taking video, greatly extending battery life and timelapse capabilities. These options automatically create the video files. A great way to start taking some pretty cool time lapses with almost no expense lay out.
When you start taking many still images with a digital cam like the other poster suggested, Picasa is a good app for creating a movie of them all. Just select the slideshow movie option, and set to 1/24 of a second for each slide.
There is a lot more to great timelapses, if you want to do night time stuff or slowly moving stuff (you'll need to rig up a wally dolly or google hyperlapse).
You could check out Lapse It... time lapse camera.
