If you have a Chromecast, use that.
If you don't have a Chromecast, use MirrorOP.
I'm in the same boat - I've had the same exact experience.
I've tried Recordable, SideSync, ilos, Chromecast, AllShareCast, Mirror to a Samsung SmartTV - all stop 2 seconds after screen capture with the phone in the cradle.
The only thing I've had success with is an app called MirrorOp. You install a sender on your phone, and a receiver on another device. The quality is poor, but you can at least SHOW someone what you're trying to record. https://play.google.com/store/apps/details?id=com.awindinc.galaxysender

I tried a number of the various apps for this and found MirrorOp to perform the best. I'm using the S6. With the MirrorOp Sender for Galaxy I can send at a decent framerate to a Windows desktop with their receiver software, or to a FireTV with their receiver app side-loaded.

There is actually an app that can mirror from a running GearVR I've used in the past. It works pretty well as long as you are on a reliable network connection. https://play.google.com/store/apps/details?id=com.awindinc.galaxysender The app needs to be installed on the phone and be started before you put the phone into the headset. For recording, I've used this app with some success. You will have to pair it with a screen recording solution on your PC/Mac though.
Here's an example video that I recorded using it paired with ScreenFlow on Mac.
OBS should also work for the screen recording portion.
