Forget the dynamic earth...while its a really amazing place for kids, its not geared up to adults. Its kinda all dumbed down so if you have more than two brain cells i wouldnt bother.
As for places to eat, i think edinburgh is fantastic for food.
For budget \ medium priced yet excellent places i would recommend bar napoli (italian) or chez jules (french) which are both on hanover street.
The mussel inn seafood place on rose street is beast.
Cafe andaluz on george st is also awesome although book ahead.
In terms of a tourist attraction you have missed, i would recommend the royal yacht britannia. I am by no means a royalist of any means and when i first visted it, i was highly skeptical. But its awesome! Its really fascinating.
Its also a real analogy for the class divide! And also only a tenner.
One final recommendation would be the zoo. Youll need to take a short bus trip to get to it but its good. About 13 quid entry though
For the buses id suggest getting a day ticket which is 3.50 i think. A single ticket is 1.50. So any more than 2 trips a day and its paid for.

My Bus Edinburgh works flawlessly on Android. But the official Lothian Buses app does the job as well.

If you're going to be in Glasgow and edinburgh for your entire trip then its dead easy being a ped.
In Glasgow you have trains, buses and the tube to get you around. In edinburgh, everything you'll want to see is within walking distance of everything else.
In edinburgh, there's a great bus network also....1.60 for any single trip or a day ticket (unlimited bus travel over the course of a day) for around 4.00 or something like that.

If you are choosing to visit outside the cities however, Scottish public transport is notoriously bad. Depends on your destination I suppose but there's probably not going to be a good choice other than car to get there.
