Netmonitor and Cellmapper are the only apps that I know use 7.0 APIs (display true band number not a guess). If you don't have Android 7.0, LTE Discovery is fine as long as you understand its limitations.
It depends. If you live in the countryside I'd definitely call it a problem, in cities it's okay, but you might loose signal sooner
There are Apps like this that can show you which LTE Band you're connected to. If it shows a lot of "L800" where you are, I personally would stay on the Stock ROM.

Many unlocked phones report LTE as 4g. You can see network type for example with this app (Net Data Type line). What happens when you place a call while on LTE? Does the app still shows LTE while on call?

You can determine the used network by looking up the MCC/MNC of the connected network.
Apps like Net Monitor can do that. And then crossreference to this Wikipedia list.
Also when roaming you are often allowed to use more than one network in a country. Can you force it on another network in the setings?
