I've similar needs and now go with neutriNote. It can capture various things yet store them all in plain text and export to PDF. Try out Omni Notes too , unlike most note apps it's open source.

SimpleNote does 1,2 & 3. However, using their webapp, you can bulk download all your notes in a zip.
Doable in neutriNote with Markdown table and customizations with the likes of D3. You may have to read through its documentation though.

With neutriNote, I can select an image link and grab text from the image by tapping the ocr icon. Just wish it's better documented though.

I use Jotterpad (I still use it because I pajd before the subscription model) and neutriNote. It seems you've tried a lot of them, so I can't suggest many either. A couple of others I can think of are Epsilon Notes, iA Writer, and Fairnote. But I prefer neutriNote.
neutriNote is pretty straightforward if you take the time to read the manual. You have quite a bit of control over its settings and preferences. I think it does have a separate paid app for DropBox support but I use DropSync or Synchronize Ultimate because they integrate with Tasker.

neutriNote does have Python support but I don't know to what extent. I'm not familiar with Python syntax (but your script ideas do sound appealing).
The developer made a User Guide to help get started and to turn on parsing.

I use this one now after moving from Joplin. All files are saved in a folder in .txt and it has an autosave and incremental backup.
I would say neutriNote is the best, rich feature set given its "apparent" simplicity. A bit learning curve to fully utilize its deepest features but well worth it in long run (more so for academia usages).

I handle notes using TagSpaces on desktop and synchronize via NextCloud using FolderSync. I'm not too fond of TagSpaces app on Android so I use neutriNote, because the simple filtering system it offers works reasonably well with the tag system. Also it has fulltext search :-)
I switched from Evernote to neutriNote completely, though ultimately whether you can do the same depends on your use case.

neutriNote pretty much has replaced Evernote for me.
neutriNote. It's a notes app that supports markdown and LaTeX, which is really handy if you need to make mathematical/scientific/engineering notes (which I do). It's pretty powerful beyond that too:
you can add arbitrary HTML if markdown/LaTeX isn't enough for your formatting
It's organised by tags, rather than folders, which is a mixed bag. I'm sure it'll be really useful once I get around to tagging all the notes I imported in, but I've had it a fair while and still not bothered yet. Also doesn't play so well with syncing your notes to the cloud and accessing them somewhere that works by folders and not tags - especially given that the tags aren't part of the file itself, but are hosted in a separate settings file.
It's not perfect, I've found that the syncing (which requires an additional add-on app) can be a bit dodgy sometimes, although apparently a recent update fixed a bug there. I've also had issues with larger files. It says it supports up to 1.5MB, but I had a file that was smaller than that which would get truncated if I tried opening it in the app. No error or anything, just bam, most of your file is gone. Haven't yet written to the devs, maybe it's something that's easily fixable.
Still, even if it's imperfect, it's pretty much the only decent notes app I've found that supports markdown and LaTeX, and aside from a few issues it's pretty darn great.
