What I usually do is record interviews and meetings, isolate key points and prepare 1 slide for each one.
To record audio I use SnipBack, a smart mobile app that allows you to save just the important pieces of a conversation.
I then do transcription manually and slides with power point.
Not sure if this actually falls under Audio Post. If this doesn't, my apologies. Would appreciate if I'm pointed to the right subreddit.
I'm looking for a recording software that saves the last x minutes separately while continuing a live record.
The x can either be preset or configurable. When I give the command, the last x minutes are saved to a separate file while continuing to record the live audio. I found an Android app, Snipback, that does what I want, but I'm looking for something for Windows 10.
I've only used Audacity as a DAW and it doesn't have this feature, and so my search begins...

You can use SnipBack, it is specifically designed for that.
It also has a nice and neat interface to save just what you need, instead of going over 24h of audio track, which can be, ehm... Inefficient.
I can suggest you SnipBack, an app designed for taking audio notes during classes and meetings.
You could write down your notes, and integrate them with snipback's audio when something is not so clear.
