What you don't understand is that if your employer or boss lies to you about how your pay works, that changes nothing.
I get that many bosses in the restaurant industry lie to their employees. This is because they will do shady and illegal shit like try to pay you 2.13 an hour even when your tips are short. And sticking you with taxes you shouldn't actually owe because they pretend you got tip you didn't.
First, your boss lying to you and breaking the law doesn't change the law. You are still wrong.
Second, you are supposed to keep a personal tip log. If your boss ever pays you less than 7.25 an hour or makes you claim tips you never got, you keep a record of this in your tip log.
When you file taxes at the end of the year you adjust the totals your boss reported to the actual totals. The IRS considers a server's tip log to be 100% of the of evidence in a situation like this. The employer will get in trouble if the IRS flags anything and you simply show the IRS your tip log proving your employer lied to the IRS.
