I got the DASH Compact Air Fryer because I don't have much counter space, and I really like it, but I'd say that if you have more room you may want to opt for a larger one just so you could cook more at once. It's fine for one person, but you can't really do more than one serving in here at a time.
Because it's so small, it also tends to get hotter faster, so I've had to modify some air fryer recipes I've tried out which were designed for larger machines because food just cooks faster in this tiny one. After getting over that learning curve though, it's been great! It's very easy to clean, which is important to me, and has settings for things like poultry, fries, etc. which is nice. Frozen fries come out great in here, and I'm planning on making my own homemade fries soon too. I also roasted some squash in it and loved how that turned out. I also really like not having to use extra oil so things are a bit healthier overall. I say go for it!
Have you ever seen the Stasher bags? Target or amazon has them (https://www.amazon.com/Stasher-Reusable-Silicone-Sandwich-Storage/dp/B01DZQT9CU) and they are a miracle worker. I have 2 kids under 4 and sometimes I have to make dinner in a split second. You can steam veggies (healthier than most options) in a minute, cook rice, scramble eggs, re/heat meat, I make applesauce quickly with these as well. They can be a sous vid container as well if you want to boil a meal prepped ahead of time (or cook fish PERFECTLY, really and truly. Let it marinate while you work and boil it for a couple of minutes and voila, a healthy meal). Really, I can't sing their praises enough. I would invest in a couple of these to make dinner easy on you. Also look into some meal prepping, when it's hard to cook it's hard to motivate yourself, having some meals made already will help you stay healthy.

Ingredients: 1.5 or 2 pounds of Chicken Breast 1 ½ tsp of taco seasoning (I used the spice lad taco seasoning I bought at Costco) ½ tsp of baking soda (It makes the chicken tender and juicy) 1/3 cup diced onion 1 tsp crushed garlic ¼ cup poblano pepper ½ cup frozen corn 1 tsp cumin 1 tsp oregano ½ tsp coriander 1 brown sugar or monk fruit sweetener ½ tsp smoked paprika 3 to 4 cups enchiladas sauce (I used Old El Paso Red Enchiladas Sauce) 6 Low carb tortillas (I used La Banderita CarbCounter whole H=Wheat Wraps) Queso Cheese Dip (I bought mine a Trader Joe’s, it is very yummy and still healthy for you. You can use as much as you want but I used 2 tbsp per enchiladas) Lite Mexican Cheese Blend (I used the Trader Joe’s brand but you can use your favorite) Salt & pepper to taste Cooking spay Garnish ideas: diced can or fresh tomatoes, fresh cilantro, diced onion or poblano pepper. Bake at 400 degrees for 20 minutes or until the cheese is melted. Serves: 4 to 5 Meal prep option: There is no need to bake the meal prep enchiladas, you can just freeze it as it is then remove it from the freezer then night before you intend to eat it and bake it at 400 degrees for 20 minutes.
