It has a few names tbh: glitter dust, pearl lustre dust, edible lustre... you can find it in baking supply shops---it's used to paint fondant petals and give them a nice glittery sheen. It does the same thing for sweet/alcoholic drinks. It looks like this
Honestly it's not a great book in and of itself - our friends got it for us as a joke because we use our sous vide to cook so much. What's in the book is great info, but you can totally just find it all on the internet instead.
