Dig them up, let them dry off in the sun for a bit as they are main crop, if you are going to store them then get a large hessian sack like these from Amazon.
Then store them in a dark dry place so they don't start turning green and check them once or twice a month while in storage so you don't end up with a of cheesy potatoes that have gone bad! That is of course if they last that long, as you most likely will be eating them too quickly for that to happen!

That's the one I found most useful when I first got a allotment.
Ok ours was like that a couple of months ago, we have it fixed now! You need a golden claw cultivator
A garden fork, a soil rake and a slab of lager.
Do a couple square metres at a time, as soon as you’ve done some cover it with plastic and weigh it down. Couple of weeks your done. If you look at my profile there was a before and I’ll post a current :)
If I have to do some weeding etc then a screw in parasol base is handy for a shady parasol. As has been said early or late in the day. Loose light clothing. I also have set up a shady "Porch" for my shed so jobs like shelling broad beans and potting on brassicas etc can be done in comfort.
Nice! This is my first year with the greenhouse and u have the pots directly on the base. I've been thinking about getting some tables for next season but I'm worried about the height etc.
As an alternative option I was looking at getting a shoe rack. Something like this might be a good option. https://smile.amazon.co.uk/dp/B0039NL3LK/ref=cm_sw_r_cp_apan_glt_fabc_J7R1ET2K9J5AFFYCSE9X?_encoding=UTF8&psc=1
I have a few water butts with these attached to them : https://www.amazon.co.uk/Kingfisher-WT100-Electronic-Water-Timer/dp/B004HKV1EI/ref=mp_s_a_1_5?dchild=1&keywords=water+timer+garden&qid=1619383718&sprefix=water+timer&sr=8-5
Then attached to those some drip feed irrigation lines
I found this book useful because it gave me some structure to work to.
With regards to the Horsetail - while we all need to be reducing our Carbon footprint, you might want to look into one of those butane powered weed burners.
They're pretty light to carry, and the gas ones are easier to turn on/off than the old Paraffin ones like my Dad had.
I don't know how much mileage you get out of the gas bottles, but I was thinking you could quickly blast any shoots from a standing position every visit, which might be easier on your joints.
Link for illustration - I'd shop around to see prices, and see if it's worth it for your situation/budget.
