Like you said, a reaction rod or Magpul Bev Block would be ideal for AR-style guns, and for bolt guns, a barrel vise would be the optimal setup. That being said, before I knew really anything about what the hell I was doing, I was torquing muzzle devices on without any of those tools, and honestly I never had any issues.
My neighbor and I shoot out to 1000 yards at a local farm, and he's a much better shot than me. His muzzle device attachment process is literally just putting his gun in a vise and torquing the muzzle brake. If it doesn't affect his accuracy shooting .308 at 1k yards, I'm not sure what will...
To avoid damaging the finish on firearms, I definitely recommend picking up some magnetic nylon vise jaws like these.

What do you need the snap caps for? If the answer is 'dry firing', then you've been misinformed. The AR platform is very dry fire friendly, anyone in the military will tell you the hundreds if not thousands of dry fires they've done.
Alternatively, if you intend to use them for firearm malfunction drills(the correct answer) then these are what I've used without issue.
I bought these expecting them to be shit but have been more than impressed especially for the price.
I've thrown 7.62x54r, 5.56, 7.62x39 at it and it's taken it like a champ.
Just make sure you hang them on chain or something with give.
