A hygrometer gives an exact reading, not a 20 point range. I just scrolled through you pics again and I must of missed the last one. I did not see the first time the you have surface pins. They’re coming along. So Forget all those side pins let her go at her own pace. Your going to get a more fruitful harvest if you just have some patience and let her finish. The side pins are a result of you humidity dropping in the chamber you need to keep it consistent. Go buy a hygrometer with a prove the extends on a wire. They are less than $10. Then make sure it stays in the 85%-95% range at all times when your fruiting. Transfer your block to a bigger tub and you’ll get some of those side pins to mature but concentrate on the surface and as long as you keep an 85-95%RH with temps in the 72-76 Fahrenheit range you’ll get more surface pins. Just let the side pins do what they are gonna do. Concentrate on you surface she looks nice and healthy and I’m sure it’s gonna turn out fine for you. Buy a hygrometer that has a temperature probe as well. Those are 2 very important markers in fruiting you want to know your levels on when fruiting. Get the kind that has a wire that extends and put the probe inside your tub and the meter outside the tub. Like this one:

If you want something better than a polyill filter for the fans, I bought some PM2.5 filters and taped two together with 3M micropore tape and they fit nicely over the fans.

Ventilation could definitely be a culprit, but my initial focus is on the temp. 22 degrees is pretty low, by getting the temp up around 26 you'll really speed up the growth (from months to weeks) and can avoid problems like wet rot (can be common when spawn time takes longer than 4-5 weeks because of the excessive moisture in UB bags).

Mine looked exactly the same a few days ago. Most likely bruising. The Q-tip test is super helpful for this. Saved me from burying a decent harvest. Probably got some misting on your myc or water droplets from the lid.
Try getting a desk fan to circulate air instead of the ceiling fan. I have this fan laying around and just cleaned it out and have been using it for FAE. Works way better than manual fanning. Just hold it about the top of the bin height, maybe a little lower, and turn on low and slowly cover your grow area. I've had no issues with contam and my fruits look amazing, no fuzzy feet or weird blobs.

The yellow is just metabolites it looks fine but it is an indicator of a bacterial infection possibly or is getting ready to fruit but cannot due to being in the jar and no substrate.

If you're unsure of what the temp is you can either get a cheap pack of thermometers off amazon, or if you want to be able to see what temp it was, for example, while you were asleep, then you want a temperature datalogger like this.

Get one of those cooling fans you add ice water to. It’s like a swamp cooler but its a small little cube, it also produces humidity. It’s an evaporative cooler.

I have a Ultraviolet Germicidal UV Lamp I got off Amazon to clean my work area that also claims to kill off mites. May be an option for the house if you're not wanting to use chemicals.
I use a UV light to sterilize my work area before doing anything. I converted a 4x4 grow tent I used for cannabis into a walk in still air box.
Right now it looks excessively dry. Use a fine mister only to make sure you are dispersing very small droplets on the surface evenly so when you fan it triggers evaporation and pinning when you fan it out. Keep the lid on the right way without latching it and make sure the sides and lid are also finely misted every day. You dont want the sides and top of your lid to be dry. Unmodded tubs can struggle to get air and/or be excessively dry or wet. You'll have to play with it but what you don't want is big water drops on the surface and sides as it causes pooling issues while you're trying to increase moisture.
Do you normally use the humidifier then for hydrating it? If you're misting with a spray bottle, get a flairisol asap. It's bruised and probably from misting it.

And as far as your fear of fucking up your grow… My guess is that there’s not much hope for whatever you’ve concocted there, so I would honestly recommend just pulling that bin out and away from your grow space, cleaning your area as if you’d had a contam outbreak, and starting over.
Uvc lights aren’t that bad but they are dangerous. Are you using bucket pasteurization? It worked for a while for me but I’ve had to go with putting sub in a large gusseted spawn bag and put in in my pressure cooker on really low heat for like three to four hours. Bucket tech sucks really. I think a food warmer stream well would work great for pasteurization. They’re costly though.

I recommend you spend a little more to get the best outcome on your influx fan. This Levoit HEPA-3 grade room filter that sucks air from the bottom. You attach dryer vent tube to the top and bring it through one of the venting holes going into the tent. You not gonna wanna run this on a timer. I let it run continuously on the LOW setting. Use some 2.5" sealing tape and attach the tube to the top of the filter. This way you take all airborne contaminates out and are only pumping pure air. The low setting is perfect. The only problem with this set up is that you can not turn the power on and off, if a timer shuts it off you manually have to pushnthe button again to get it to power on again. It works for me cause my power never goes off. True HEPA Filter
(1) Get a fan like this (don't let the description scare you, this one would be great for a small Martha)
(2) cut the connector off, strip back the leads and connect it to this barrel plug. Now you can connect it to a plug-in timer of your choice.
My sprayer holds less than 2 cups and only needs to be refilled once a week if I have multiple tubs going. You may be over doing it. Try using a fine mister like a hairdresser would use.

Well your bag looks great. I would just avoid using any mycelium that clearly tougher the cloudy agar. It’s a weak bacillus strain and usually fairly benign. But it will transfer to a liquid culture easily if your not careful. You can kill the bacteria on the plate without harming the mycelium. Get your self a UV-C germicide light and put it right on top of the syringe or plates within a few inches and leave the light on 20 min. It will kill the bacterial a and you can safely use the mycelium.

My distilled water with 1/8 teaspoon of lime gets a pH reading of around 12. Will this negatively impact the casing layer? Is the distilled water off? Could it be the pH meter? I calibrated it but haven't had much luck. This is the one that I got:

Your HEPA, is the air input to the filter outside of your tent and the outflow that pushes the clean air, inside your tent? Do you have a humidity controller set to regulate the RH range? And a thermostat that controls heat? You need an exhaust in order to get the air flow moving so it always is pulling air out at about the same rate fresh air is going in. If the answer to those are all yes then you got all the elements necessary to grow Martha Tek. If not make the adjustments so they are. You probably can get away with this exhaust if you have a small tent inside a room. But you may need a dehumidifier in the outside if the tent so you don’t damage your room.

The so called UVC lamp that I bought Compact Bulb U/V/C Light with Ozone Lamp E26 25w 110v Covers up to 400sq does produce Ozone. The quartz bulb envelope will permit a 185nm wavelength to emerge.
You can use a fumigation product of some sort like this and you'll be fine I think. All the best!
The so-called UVC lamp that I use is a fluorescent type that I got from Amazon CTUV-25 Trust me it produces copious amounts of Ozone. I worked in a spectroscopy lab where we used small ozone-producing mercury lamps, so I'm familiar with the smell.
Best bet would be getting an air purifier and keeping up with regular cleaning with proper chemicals. Replace your central air filter too, there is a difference in a $3 filter and a $20 filter.
I have a Veva unit i got for $100. It is not normally $200 for the unit, it may be $120 for you but I have business pricing so I get it for less. Buy a pack of replacement filters while youre at it

Also. Those cups suck. Use the shorter 2oz versions. Shorter cup, flatter wider base for agar and the lids snap on easier IMO. Additionally, less wall surface area = less chance of accumulating contams.
I've been isolating the mycelium agar specifically for that beautiful rhizo. Unfortunately, my past 6 attempts have all encountered the green monster and I've never gotten to see what they grow in to.

Ok the coir is washed but not pH buffered so it that came off the package then that's just how they process the coir has nothing to do with the casing. Let me ask did you follow these steps in this order?
1.) Spawn to full colonization on grain
2.) Added grain to bulk substrate of verm and coir
3.) prepared casing later separately with peat moss and verm
4.0 Buffered water with hydrated lime to a 8.5-9.0 pH
5.) Mixed casing and buffered water and heat sterilized
6) Waited till the surface of the bulk substrate was fully colonized (10-14 days) and then added the casing layer about 1" thick all over the substrate surface.
Did you do all those steps in that order?
There's loads of apps out there that can help with colour detection, something like this might be handy for you to have on your phone if you're ever stuck with a similar problem

If you choose another one choose ones with glass tubes as they are uvc. Wear sunglasses if using cause you can seriously burn your eyes with these. Probably best use case is to get a couple and leave it on for 30minutes in a room to clean it and turn it off when you're in the room
