Totally agree on the level 2 charging. Why not give it a level 2 charger onboard? You can have it on the S or DS, so why not this new design? As far as a top case is concerned, I bet the frame is the same as the FXS and thus all you need to add is the rear rack. From there you can add a top case from $50 to $250 depending on what brand name you want on it. I put a cheap Amazon $60 top case on my FXS because I rarely use the top case but wanted the plastic base.
Theoretically possible but practically... probably not.
You’d need a battery generator sized for the charger. Your motorcycle probably has a 400-500 watt charger to allow it to charge in 6-8 hours. Since the battery you linked is only rated for 100 watts continuous, you’d need a bigger battery.
Here’s a marginal option:
BLUETTI Portable Power Station EB70, 716Wh Rechargeable LiFePO4 Battery Solar Generator 700W Inverter with 2x100W PD Ports, 4x110V Pure Sine Wave AC Outlets, Emergency Power for Off Grid, Outdoor https://smile.amazon.com/dp/B092VSKM2D/
To fully charge the motorcycle, you’d need to charge the battery at home (5 hours), then carry it (21 pounds) to the motorcycle, then charge the motorcycle (1-1.25 hours), then bring the battery back inside.
Then repeat that process 4 more times.
Seems like too much of a pain, besides the chance that your battery grows legs and walks away.
Btw this battery is rated for 2500 cycles, meaning you’d need to replace it in a year or two. Most battery generators are rated for 500 cycles, which would only last you a few months.
You’ll be much better off finding a way to plug in, even if it’s kicking a friend a couple of bucks a month to charge at their place.

If I did it again I would get the 3kW motor and bump the battery to 100amp continuous. I was thinking the throttle wouldn’t be smooth but it’s butter. And the 3kW will run you the same price
THIS one if the other doesn't fit.
Yup, very expensive. $520 each. That's almost $1/watt-Hour. However, if you were buying a Metacycle with 4000 watt-hour battery, you would be paying $6500 plus shipping today. So effectively $1/W-hr for the battery plus $2500 for the rolling chassis.
Yeah you could, but portable power stations (what high capacity batteries are called) are chunky and expensive. But may be worth it for you.
Here’s one I’ve looked at: Limited-time deal: Jackery Portable Power Station Explorer 1000, 1002WH Solar Mobile Lithium Battery Pack for Home Emergency Power with 230V/1000W AC Outlets, Outdoor RV Camping https://www.amazon.co.uk/dp/B08RNQ9P2R/ref=cm_sw_r_cp_api_i_dl_8B6AJDDGMHADSR2KM875
I’ve got a Silence S01, with a 5600wh battery, for for my bike that 1000wh portable power station would give me about 18% of a full charge. Decided against buying one. So yeah could be useful but it won’t double your range or anything!
This should work, and would do the job in about ten hours https://www.amazon.com/Charger-Li-ion-Battery-Aluminum-3P-Plug/dp/B07R33QHD4/
According to the electrek review, the included charger does the job in 6 hours, so it's probably a five amp charger.
It just a standard enduro frame, that I modded for my needs. https://www.ebay.com/itm/254126567791 In fact there are much better ones available 2020 Newest Stealth Bomber Electric Bike Frame, Enduro Ebike Frame for 3000W/ 5000W/8000W Electric Bicycle DIY Kit,Ebike Conversion kit https://www.amazon.com/dp/B01N4M73CC/ref=cm_sw_r_sm_apa_fabc_MZZR8MNRFSQPKAYA7AT2?_encoding=UTF8&psc=1 The newer ones make it so much easier to take the battery in and out and you get access to about 25 percent more space. My only suggestion is the stronger your swing arm is the better. My swing is about 50 percent bigger and thicker than the average arm on most of these frames.

Take a small section of existing 12AWG extension cord and add one of the ends on it if possible to leave the molded one on the other end and replace the end on the remaining section.
There is a good book that I would recommend from Amazon to get you started: Build Your Own Electric Motorcycle https://www.amazon.com/dp/0071622934/ref=cm_sw_r_cp_api_i_sSvdDbT1A75PN
Also, there is a great company in California, called Thunderstruck Motors that sales matched components as kits. I have a 1972 Honda CB 450 conversion that uses their “budget screamer” kit for the main drive system. It’s the same motor and controllers that others here have used. https://www.thunderstruck-ev.com/motorcycle-and-kart-kits/
