Is your pc connected ro your router via ethernet? Also, a single wall between your router and your quest/pc can cause a lot of trouble. I fixed my latency issue's by setting the airlink bitrate to a fixed 150mbps and getting a second router just for my quest.
I got this one, connected it to my pc via ethernet and put it next to my playspace
This might sound intense but updating my BIOS really increased performance. If you have a modern motherboard with a modern UEFI, it should be a fairly easy process. Only do this if you know what you are doing though!
Also, check your cable. Official is fine, but cheaper ones, even if they market themselves as so, can't always keep up with the transfer rate. I'm looking into getting a Kiwi cable, which is known to be a good alternative.
The window display of the game can take a toll on performance, so disable it with "-nowindow" in the launch options.
Texture quality is independent from fidelity settings, set your texture quality to low and see if it improves, the game will still look great!
Disable any overlays, like Nvidia's bullshit and also Window's/Xbox's gameshit.
Close other programs before playing, you need all the resources you can get. Browsers can take up a lot of memory.
Let me know if this does anything, if not, there are some other ideas I have tried myself, but they're a lot more obscure
It's not an official cable no, it's one of these. To be honest, it does look a little dodgy. I own Virtual Desktop, so I might try that out. Are you using Airlink? I could try that too.
If it's the cable, that is quite annoying because forking out £90 for a Link cable is very expensive. It would be odd since other games work fine with the cable, but Alyx really pushes the computer to its limits.
However, the game runs really well when it's running in non-VR... Is the game rendering twice really that much more taxing for my computer? Or is this just evidence that my cable is suspicious...
Thank you for your responce and also for helping me out, really really want to get this sorted without having to do anything too drastic, like overclocking haha
For Half-Life: Alyx specifically, you can use as much space as you want or even play sitting down. Valve illustrates this in their own HL page:

Directly into a jack on the quest or Bluetooth to your pc. Here’s a good cable that’s cheaper and has USB-A on 1 side. https://www.amazon.com/Esimen-Transfer-Oculus-Charging-Adaptor/dp/B083355P7M/ref=mp_s_a_1_2?dchild=1&keywords=15ft+Cable+for+Oculus+Quest+Link+3.2+Type-C+Right+Angle+to+USB+A+Charging+Cable+Cord+4M%2C+Black&qid=1607894265&sr=8-2
I found the culprit!
The moment I removed this Esimen Anti-Throw Handle Protective Stands the problem stopped!
Did a quick search on Amazon, this would be much better:
I think my router was the problem, but I had an awful experience with a powerline adapter. Did not boost my internet speed at all.
I installed one of these bad bois in my rig and my internet got better, but I still had really bad latency when trying to stream games. Im giving up on wireless until I move out and get my own internet plan.
The Kiwi pullie system is amazing imo. The only thing you have to deal with is the cord wrapping around itself, but that can be fixed in seconds and really doesn't bother me. If you can't end up getting wireless to work I'd suggest the pullie setup.
