I might have a self rec for you, my shifters standarlone book is poly and has a LOT of spice (incl kink) between the ff characters. The characters are bi though and end up in a FFFM relationship, so there's also a lot of FM scenes.
Found it!!! It turned out to be called the Giggleswick trilogy. No idea if it still holds up, but I remember loving it when I was younger!

Lies we tell ourselves is a book about a black girl being one of the first to go to a formerly "white" school. Some of the black students are sent there to pinoeer because the system has changed (officially, but people irl are slow to adapt beliefs). She suffers strong racism. She's gay, too, which was maybe even less accepted than being black. I liked it, it's a nice book. Oh, but it doesn't particularly focus oj gender. Not that I remember, at least.
If it wasn't for the published after or in 2000, I'd recommend "At swim, two boys" because I enjoyed that one to pieces. But picking it for a school work would probably be very very challenging anyway. Also just gay (and amazing literature) , but nothing particular about gender.
Then there is "Iron Widow". It's relatively new and has very strong feminist themes. The main character questions the clear separation of gender, wondering if you couldn't be both. She is polyamorous and hinted to be bi, and the other two MCs are male and bi as well. I really liked it, it was very fast paced, like I couldn't catch my breath in between. Problem only being, I'm not sure if it has literary merit. Themes like relationship type, feminism, gender and wanting to change the system are good discussion material, but I wouldn't give the writing a "great literature" sort of stamp. It's good and exciting, but still YA and sci-fi.
This came out last week and I was lucky enough to read it before publishing. It’s fantastic and written by a trans author.

Incarnate Accounts (there are 3 books) by Justin Schuelke. YA gay male protagonist, urban fantasy. Has ghosts, headless horseman, murder in book one, and graveyard features heavily in the second book, and demons in the third book which just released. Plus, they keep getting better as they go on, and the first one’s already good!
My absolute favorite this year is "H" by Laura Demoi. Only 74 pages. Characters are indicated with initials only, no full names, the author does not go into describing color of their skin, eyes or hair. Also, even though the author is from Eastern Europe, story setting could easily be anywhere from France 2000 or Warsaw 2015. Told mostly from 2nd person's POV it sounds like a mix of a confession and an e-mail. I found a review/recommendation on one of my favorite bookstagrams. The only source to buy the book is here:

Check out Michael Taggart's Misfit Mage. It is about a gay man and his journey as he learns he has magical powers. It has some romance, but it's definitely a very small part of the story.
I have the perfect book for you! Actually, it's a series. The first two books are out, and the author (Michael Taggart) is working on a third now. It's about a man who learns he is supernatural with the power to do magic. After his "waker" moment, Jason quickly becomes engulfed in the magical world he never knew existed where he makes some new magical friends, meets a man that literally sweeps him off his feet, and also makes some powerful new enemies. The story of is focused mostly on Jason and his adjustment to this new life with romance a secondary arc. The first book of this series is called Misfit Mage. The second if called Melee Mage.

Wildfire is a fantasy book with a main romance between male characters. It's a good length read with an interesting plot and likeable characters, and a nice balance of drama/action and light-hearted moments!
You can give Wildfire a shot. It's a m/m fantasy book, with an absorbing plot that's got both drama/action and some fun lighthearted stuff. The main character (one of two, an elf) isn't transgender, but he doesn't give a flying fuck about gender norms which is nice.
It's pretty new but so far people who have read it have only had positive things to say about it.
