Looks like it's on the right track! As for temp, you can get a seedling heating mat for relatively cheap. Im sure they have something like this on Amazon's UK site. Make sure to get the temp controller too.

It's a standalone unit in that it plugs into the wall, no stove needed. It's great since it turns itself off, and you only need to watch it for the first 10 minutes or so until it gets up to pressure, then you will turn the valve and let it be.
You will be set for at least 2-3 years.

You can do the bars two ways. The proper way, and the lazy way.
Proper: melt some chocolate to 102-105F. Then remove an amount of chocolate that will fill up a little less than 1 bar. Add your ground up mushroom stuffs, and add it to your small mass of chocolate. Using a metal spatula fold the chocolate over on itself, while it slowly cools down to around 95 degrees, then warm it back up to 100F, slowly mix it some more, and then fill your chocolate mold.
Lazy: melt chocolate to 100-105F, add in the complete quantity of ground mushroom to the entire batch, stir it all up real good, and then poor the mix into the mold and scrape the top of any excess.
The proper way will come out more like a chocolate bar you get in the store, and the lazy way comes out as a flimsy bar that has the consistency of chocolate fudge. The lazy way will need to be refrigerated as the cocoa will lack any sort of crystalline structure to give it rigidity that would otherwise hold the cocoa together.

I use a bathroom and take out anything and everything I can. I run the fan for an hour before and then turn it off and let the air settle for 10 minutes before I start working. I put my SAB on a table that I move in there and clean the table as well as the walls (have been using 70% iso but gonna switch to 10% bleach water so I can flame sterilize). Then I wipe down my sab and all the tools I’m going to be working with inside and out of sab with the disinfectant that I choose. I use a fresh pair of gloves and sterilize my hands up to my elbows (also shower before). Whatever substrate I’m going to be using I keep it open as short as possible and seal it as quickly as I can. Flame sterilize needles and scalpel every bag or jar or dish. How many mss did you use to inoc those dishes? It could be that the mss was contaminated and not the dishes, but could also be that the steaming doesn’t get it to the proper temperature. It’s not cheap but it’s worth it. I can fit 6 3lb grain bags in it, also use it for agar and can use for jars. It’s got a gauge so you can see what pressure you’re at, I’d recommend getting more of the metal plates with feet so they can be raised an inch or two off the bottom so you can put more water in it so you don’t boil it all out. Make sure to read the instructions cause those things build up some pressure. I thought about instant pots but they only build up to about 11-12 psi I think only one model builds up to 15.
Also how were your dishes stored before you used them? We’re they bagged sterile? Could it be a storage technique that allowed contam?
Well. So it's my understanding that an incubator is really only necessary for agar, and if you live somewhere cold to regulate your inoculated substrate of choice. After that normal house temps seem to work just fine. I just harvested upwards of 150+gs of GTs. But I get the desire to use the item you purchased, or at least incorporate it into your grow. It's a neat looking device. (Much better than my fish tank heater and bubbler in a double tub.🤦🏻♂️) But yes. Hopefully that answers your question.
No offense, I mean nothing but to inform you of a better, easier way. What you're going to want to do is get yourself a tub. (Here's what I used for my grows.[Dubtub] https://www.amazon.com/dp/B07C858S1B/ref=cm_sw_r_apan_glt_i_G3NC290WN5JSN4MXP01N?_encoding=UTF8&psc=1) then what you're going to want to do is get some silicone sealant for around the rim of the lid. Or micropore tape to seal the space between the lid and bucket. Then you're going to want to coir verm tek in a 5 gallon bucket. You're going to put 6holes in your tub. One on each end just under the handle and the other 4 on both sides of about 3-6inches from the bottom. That's the level your bulk will go-to as well. Now cover the hole with micropore tape inside and out. (Don't forget to be doing all of this with sterile technique in the forefront of ur mind.) Then make yourself a liner for the inside, mix 3 inches of coir/verm with your colonized tub, being sure to break up the entire thing back into individual grains and mixed in evenly. Then cover with a top layer and pack it in pretty firmly. Put your lid on and seal with micropore tape. The placement of the holes in the tub will create a natural flow of fresh air. No fanning, no misting, no extra chances for contamination to get in everytime you take the lid off. Especially since by the time you get to fruiting conditions spring and all of its airborne nonsense with be starting up. Don't worry about making the bottom black, that's a nonesense extra step. It’s more difficult which is why you have to make sure it’s right from the beginning. However, you should consider spending $20 at Amazon and buy yourself a digital meter that will tell you the moisture and pH level of your substrate. It’ll give you a peace of mind when you’re in doubt…
Sclerotia (truffles) are probably the easiest to grow.
Try to find a spore supplier within your country, so they won't have to pass through customs. Look for P. Mexicana, P. Tampanensis (my recommendation), or P. Galindoi (I did not have luck with this species for some reason and there seems to be a lot of disagreement about whether it is a species in its own right or a cultivar of P. Mexicana, so YMMV.)

I bought this bad boy and it worked great. It heats to around 165' but I think you can take the heating element out of it and just use the forced air to dehydrate if that's your preference.

Do a lot of research and don't eat anything until you're absolutely 100% sure - there are a lot of look a likes in the woods, some of them can hurt you (no joke).
I'd recommend getting involved with a mycology or foraging club in your area, it's a great way to meet like-mined folks and have someone walk you through identification of different species, what to look for, where to look for them, and when.
Here’s what I first bought out of simplicity. It’s the cheaper bang for your buck on Amazon but you need a scale to weigh it out. Otherwise, coco coir is commonly sold in a 650g brick, and sometimes in a 3 pack. Standard substrate recipes call for 650g’s coco coir, so the bricks can be convenient. If you have the funds, you could also add vermiculite, but again not terribly necessary.
