Thanks for the response! I actually was just reading a few other posts about dummy plugs and decided to give this one a try. Looks like it might let me create a dummy 4k display with HDR enabled to stream from.

You need to have your PC logged in for it to work, I got no idea how "sometimes it works" for you even when you're not logged in, but for me I always had to be logged in.
You can set up auto login on windows, search up how to do it. Also If you want to keep your screen off while streaming you will need a headless ghost display emulator, something like this , to make it work while your screen is off.
Did you apply an update of your driver or Geforce experience recently? You may want to try to get some help on their discord, people on there are quite responsive to support
I have a NUC PC behind the TV and connect an Xbox controller and a Keycron K8 keyboard to it via Bluetooth. I sit 5m away. At first I was using the on board bluetooth and I had problems with the keyboard repeating keys. The I got a TP Link UB500 adapter and it was slightly better but still not great so I sent it back. Then I ordered this for 20€ and it work great even from my kitchen 10m away through 2 stone walls.
Thanks I added some manually and some are playable still a good amount of latency.

It's still a bit too much latency to be playable unfortunately. I'm thinking I might need to just bight the bullet and build a cheap machine to throw in the living room for couch games.

This might help you out. It’s a dongle you plug into the usb that supports 120hz. I use it to stream moonlight with my monitor unplugged.
