Hey, I also had issues (just got mine yesterday), but could in the end upgrade the firmware using the separate Superbook Update App.
At least then I could start the desktop app and see the screen of my phone mirrored on the superbook. Still trying to really get it to work properly though. But at least it is not bricked (atm).
If you power it off USB, the screen/keyboard/touchpad will work, but you probably won't be able to power anything else through the Superbook's USB ports.

I just got my S21 Ultra, and it's doing what your S10+ does. Rather disappointed. The S21 works fine with this thing AmazonSmile: for Samsung Docking Station, Baseus USB Type C HUB Docking Station for Samsung Galaxy S10/S9/S8/S10+/S9+ Note 9/8 Dex Station USB-C to HDMI Dock Power Adapter for Huawei P30 P20 Pro, Mate 10 and More: Electronics but I can't get it to do anything but mirror the screen to the Superbook, and even then it seems to go to sleep after a minute anyway. Rather disappointed this doesn't work with the phone, since it makes no sense to plug the Tab S6 into it with the same size screen for just a keyboard, when I have a better bluetooth keyboard.

I'm also on nova launcher and am happy with it. I just find it uncomfortable to up-swipe with a mouse to open the app drawer, so that's why I installed taskbar. It just adds a (hidable!) windows-like start button in the bottom left corner which opens an alphabetical list of all apps.
Reducing the DPI is great, because it gives you more of a notebook feeling instead of a enlarged smartphone feeling. Especially browsing and reading texts is way more comfy.
