I've also got the MS. Its such a beast. I've taken it on a few long distance packing trips. I had two fully loaded rear panniers though. It handles so well when it's loaded down.
I'll recommend the most noticeable upgrade I've done to my MS. Get some non compression brake cable/sleeves. I got the Jagwire Elites. Mechanical disk brakes are notorious for feeling squishy. This is due to the jacket compressing causing a lot of brake power loss. The difference is extremely noticable.

I just did a fork swap on my midnight special. If you have a straight head tube on the ICT, then you need a larger bottom crown race to match the tapered steer tube on a new fork. I can pretty much guarantee Surly’s FAQ page will have some info on what you need. They had detailed specs on what I needed for my fork swap.

It sounds like the 12mm axle has nothing to actually tighten against. Tightening the axle is only causing the fork legs to flex inwards, if there is not a hub for the fork to tighten against...
One way to work around this is to use a RockyMounts 15mm adapter and use a 12 to 15mm thru axle adapter. That should provide enough material for the fork to compress against, as if a hub were in place.

I suppose that's possible, but there aren't a lot of 29-inch frames around. :)
The amazon page for it says it fits 29 inch, so maybe the page you linked really meant to say "less than or equal to". The biggest tire you can put on a 700c DT has an outer diameter of about 1/2cm less than a 29x2.1, so that should work fine.

So although zip ties work just fine to hold a basket in place, I couldn't help myself but to try a cleaner way. I've never seen this approach posted so I figured I would share. Since the 8 pack (and I presume 24 pack too) has the handy mounting points, why not use them? I can't remember which size I used 3 years ago, but I had some clamps and extra screws lying around and it worked out great. I check for tightness every now and then and never had one start to back out.
Also I leave a heavy duty grocery bag in the bottom of the basket to keep the smaller bits from sliding through the basket. Having that and the elastic net makes for a great black hole solution for town errands and stuff for the kiddos. Added bonus: always have a grocery bag. As long as I don't over shop my bag, I know it will fit in my basket....except for today when I got that second six pack AND a family sized tres leches cake! That was a nerve-racking ride home.

Brooklyn to Lake Skentonto (Via Henry Hudson)
The route is a modified copy of an existing route, so the cues on there for food, water and groceries aren't mine and we didn't use them, but they seem like a good resource. We took Henry Hudson to spend less time on Route 9W and it was beautiful but most likely hillier. There was a road closure but we just went around it and no one gave us any shit. There's about 10 miles of gravel between Nyack and Haverstraw which was a gorgeous ride. Once you get to Seven Lakes Road, you'll come to another road closure- this is the former access point to Lake Sebago which has been closed down since ~2011 when the beach and structures there were destroyed by a hurricane. You can pass through and follow the route and you'll skirt around Sebago and eventually be brought to the eastern bank of Skentono- the route ends right at the site we camped at but there are lots of little nooks along the banks and on the other side, too. It was pretty populated while we were there which made us feel a bit better since it felt so 'abandoned' and closed off. When we got to the road closure at Sebago, there was this older couple at the gate (who we think were stoned out of their minds) who ominously told us "you can't go down that road", but once they realized we were down, they relaxed and told us a bit about the history. It's a really sweet site- we'll definitely be back. If you have any questions about the route, just ask! This goes to folks who stumble on this thread down the line, too.

Adding to this, I bought a fairly inexpensive torque wrench off Amazon, and besides the peace of mind from knowing my fasteners are tightened to spec, it also trains me on how to feel when the torque is getting close when I don’t have the torque wrench handy (roadside adjustments, for example). 16 nm is, like /u/publicviewing mentioned, pretty tight, not like “crank with your whole body weight” tight, but definitely putting some elbow leverage into the turn.

Definitely coat the inside of your frame tubes with something, the insides of the tubes are bare steel and will corrode. I am a fan of Fluid Film which protects my frames. If nothing else, unload a can of WD40 in to all of the drain holes of your frame once per year and swish it all around.

I did a drop bar to flat bar conversion and kept my stock road brakes on my Midnight Special.

There is a non "comfort"/riser version as well, along with other similar bars. Generically called "hornbars." It will allow you to get a sideways hold comparable to what you get on the drops of dropbars without all the other changes you have to make to switch from flat bars to drops (or vice versa). More traditional "trekking" or "butterfly" bars are also an option, as is just adding bar ends to your existing flat bars or buying some of the Ergon grips with bar ends built in.
In general, switching to dropbars causes a change in weight distribution by putting you into a more forward position, which means more weight on your elbows. That, along with the ton of options available to you to try using your existing shifters and levers, would lead me to suggest exploring other options first.
I think it was called Ausum and I got it from Amazon about 7 years ago. It’s not the greatest, but it’s serviceable.

Mount that to your Surly nice rack for some weather proof forward trunk space, which is also lockable. My criteria is that it has to be big enough to hold a large pizza. So if the box is under 15" then this will do it. Then you can load the rest of your gear on top of this and strap it down.
I would drill small drainage holes into the handles for wet weather/fording the river with your oxen.
