I use a Nikon DSLR with a Tamron 18-200mm lens and Photoshop CC to edit. A tripod and remote shutter release are pretty essential too.
Camera settings will always vary from shot to shot. I prefer to use smaller apertures for a deep depth of field for more realistic looking shots. I find that the wide angle lenses on phone cameras usually produce a shallow depth of field that makes everything in the photos look miniature and toy sized.
Lighting is just as important as the camera itself though. I find LED panel lights are pretty versatile and easy to use. I use similar ones to these, sorry for the giant link
Editing is very important too. I'm a professional graphic designer who does toy photography as a hobby, so I'm already pretty well versed in Photoshop. One of my favourite things to do when shooting toys is using Photoshop to edit out all the articulation points for added realism.

Here you go!! Love them! Battery life is good and brightness/color can be adjusted.
I'll vouch for Extreme Sets as well, I love them, just be aware they are cardboard and can be easily damaged if you aren't careful.
Another great resource can be craft stores, Michael's sells big cloud and galaxy poster boards that are awesome.
I also like the Tamashii effect brick wall from Amazon. Right now it's a bit pricey ($18) but I've seen them go as low as $11 before and while it's small it is good for close shots.
