I haven't tried to get any Scottish foods yet. I've been smoking my own Haddock with great results.
I was able to get a large order of Donnelly Irish Style Breakfast meats from Amazon in March but it's not available right now. I see them on some other sites though.
I got a large order of English style meats from Parker's last month. Very nice!

I've had different results depending on whether the bacon is dry or wet cured. I dry the wet cured on paper towels. Shown are Irish wet cured.
Rashers are thawed and close to room temp.
I don't flip. The rack takes care of the bottom side. I've tried the clip method but I like the curl. Helps the edges crisp up.
Top broiler is on high and preheated. The shelf rack is in the middle so they don't cook too fast.
Watch close but don't interfere.
