I’m not sure what any of this recipes are but I have a couple suggestions for you.
It’s starchy, so it’s not exactly “healthy” but it works well and holds together. Just don’t forget the xantham gum. I’ve used it successfully in cookies, cakes, quick breads and muffins. In Gf baking, if you can use eggs and dairy, usually they turn out well.

Zojirushi bb-pac20 bread machine. I always use less than the 3.5 cups called out and the bread comes out super spongy and delicious. I'm also on the lookout for other gf flours so i don't have to rely on this brand but for now this one's the winner at my house.

I just tried the Caputo Fioreglut - made jalapeno / cheddar Focaccia. I like the chew. I can see that it could make a really good pizza crust (getting mozzarella and toppings tonight). It's GF, but not for people with wheat allergies. I found it bland, so definitely add flavor.
