Most restaurants now seal their orders so the driver can't steal food. If the restaurants you are ordering from aren't, they should be. As a driver, I can tell you the majority of us greatly prefer to handle sealed bags. It removes any ambiguity about who is responsible for the contents of the order.
If your preferred restaurants aren't sealing your bags, you should ask them to do so. Tamper evident stickers are cheap and well worth the investment.
I don't have experience with Google Pay, but based on GHs FAQs it appears they do not accept google pay as a form of payment.
>Grubhub accepts all major credit cards, Grubhub Gift Cards, Paypal, Venmo, Apple Pay, Android Pay, and Amex Express Checkout. Certain payment methods may only be available on the app or when using certain browsers. You can also pay in cash for orders from certain restaurants.
IIRC, to use google pay, google search the restaurant and there is a "order now" button that you can use without downloading any apps.
