This book is used to help encourage people to get treatment for their mental health issues. Get the audiobook, it's only about 4 hours. It could potentially the thing that drives you to a therapist/psychiatrist. Depression is very real and if left untreated can be fatal. Please sit and listen to the audiobook. It's on audible but you can probably torrent it. Good luck.
If it makes you feel better, I bought some jars with proper fermentation weights (like these) and so much onions/other stuff floats around the sides of the weights, that I always end up using the ziploc method instead because it works better.
Satan's Blood is mostly capsaicin extract with a little red wine vinegar thrown in. I made an entire pot of chili just this side of inedible with about four drops once.
Of course I ate it anyway. Duh.

This is the collection that I've amassed over 15+ years of collecting. They range from sauces made by restaurants from around the country, to collectables, and everything in between. I get them from all over the place, but I really like going to hot sauce expos and festivals and picking some up from there. You get to try and buy some really unique sauces (my favorite "odd" sauce is a Heatonist sauce made with charcoal, so it's completely black).

In case anyone is wondering, the shelves on the right are these ones from Amazon, and I can't recommend them highly enough: https://www.amazon.com/gp/product/B01MQ1UEUP. My father and I made the display case on the left years ago. The ones in the corner are from Home Depot.

If anyone has any questions, let me know!
I am selling samples on my kickstarter, or full bottles if you would rather.
https://www.kickstarter.com/projects/136598712/fym-hot-sauce-spicy-and-flavorful-from-fresh-ingre
This is and should be everyone go to breakfast hot sauce. Dump it on eggs, hash browns, etc. You will never be disappointed.
Sometimes I buy it by the jug
You can probably find a mini key chain bottle and just fill it up with whatever hot sauce you want.
So upon initial search and my limited japanese, I was able to track this down for you at Japan's Amazon and this from Rakuten Japan. I really wasn't able to find somewhere that may sell it if you're in the US.

I tried googling Peyang / Peyangu / Peyoung (some reason google sees these as all 'similar') and Gekikari also tried googling ペヤング× 激辛ソース (the first part is the brand name in katakana "Peyangu", and the second part is "Gekikara sosu" or spicy sauce).

Regardless, seems hard to get in the USA.

Edit: Addendum, it seems like Rakuten Japan does global shipping. So you might be able to order from them if you want it that badly! I think the site can be converted to English or you can try your browser's translate feature if available. Should be good enough for you to put the order in. You can find the English options after you add the item to your cart and attempt to check out / open your cart.
Crystal is good, so is Franks but the best I've had for mild sauces like that is Louisiana Gold. It is not easy to find however. I've seen it on occasion at the supermarket. Amazon has a 3 pack for $21 so pricier than most.
https://www.amazon.com/Louisiana-Pepper-Sauce-Tabasco-Peppers/dp/B007ZRLM3A/
Including the XXXtra hot Yucateco? If you've not had that one yet, it's a step up in heat from the others and definitely tasty.
Some comparably tasty and easily acquired habanero sauces: Yellowbird, Secret Aardvark, Queen Majesty.
Next beyond habs you're going to start looking for sauces with ghost pepper. Nothing specific comes to mind off the top of my head, I have a random assortment of a bunch at home, but Yellowbird makes one in a larger bottle.
I just bought the half gallon size and have about a third of the bottle gone allready :)
I've thought about this purchase many many times.
I can meet you half way with a great garlic hot sauce: The Pepper Plant Chunky Garlic I slather food in it. It’s not super spicy, but it’s tasty
Tropical Pepper co's ghost pepper hot sauce is one of my favorites. I'm not sure if it hits their claimed 500,000 scoville units mark, but it is pretty damn hot. The naturally fruity flavor of the ghost pepper really comes through. Ingredients are: Naga Jolokia Peppers, water, salt, acetic acid, garlic pulp, xanthan gum. I really can't get enough of it. Also a heads up if you wanna try it, you might want to try looking at a local carribean of some other type of ethnic market. One grocery store near me sells them for $2 and change compared to $9 that I linked on Amazon.
Same experience here. I got mine for my kombucha, and it was just a random one off Amazon, around $20. It came with some calibration solution powder as well. It's been reliable since I got it last year.
Edit: this one, more like $15. https://www.amazon.com/VANTAKOOL-Accuracy-Measurement-Household-Drinking/dp/B0789G7MVP?keywords=PH+meter&qid=1537457868&sr=8-3&ref=mp_s_a_1_3
Huy Fong sriracha. I've tried maybe a half dozen other srirachas and to me they dont even come close.
Edit: https://www.amazon.com/dp/B008W7YCGQ/ref=cm_sw_r_cp_apa_i_1EioFbEVGPX9Z
To be fair, this comes close but still isn't it. This is going to be less spicy but a little more sweet than Huy Fong and I've been told is more reminiscent of Sriracha in Thailand.....
cool - i want to buy a couple sizes. big and small. any recommendations? i see this one similar to OP's here on Amazon
got that Fiery Fermentation book, and my peppers are getting ripe...thnx in advance!
edit - maybe this one for a first timer? need to get all equipment
Scotch bonnets are great in fruit based sauces; mango, pineapple, even berries. For the most part supermarket vinegars are all 5%. It's the pH of your final product that determines shelf stability. Aim for a pH of 4 or below.
Here's a quick and easy recipe to start.
1 part Scotch Bonnet
1 part pineapple or other fruit
0.5 part white wine or white distilled vinegar (if using a less acidic fruit like mango, increase to .75 parts vinegar)
2.5% by weight of salt
Blend everything together to your desired consistency, simmer on low for 20 minutes and bottle. Heat should be close to Yellowbird. pH should be below 4, if you are unable to test and verify, I'd recommend a smaller batch and keeping it in the fridge. If you plan on making large batches that you'd like to keep for months, I highly recommend purchasing a pH meter. Don't cheap out on the crappy $10 ones on Amazon. This is the one I use: https://www.amazon.com/gp/product/B01ENFOHN8/ref=as_li_qf_asin_il_tl?ie=UTF8&tag=jamesgu208-20&creative=9325&linkCode=as2&creativeASIN=B01ENFOHN8&linkId=df64ae6176e805131aac3fd450942463
I would recommend El Yucateco XXXtra Hot Kutbil-ik Mayan Style Habanero. The first ingredient is Habaneros. They have other habanero sauces, but this one is by far the best tasting imo. It's a little smoky, lots of heat, and has become our go-to sauce for breakfast tacos.
I really like these spicy chicken ramen hot sauces. I think they may be my favorite hot sauce of all time.
Calabrian Chili Hot Sauce "Hot & Tangy" 250ml (8.8 fl oz) by TuttoCalabria https://www.amazon.com/dp/B079YDYV8X/ref=cm_sw_r_cp_api_glt_fabc_QG1QHA5A6KWAGF4T19EV?_encoding=UTF8&psc=1
It’s a fairly simple sauce which is what I think will make it so versatile. Just good clean tangy pepper flavor.
If they end up loving one or two the best, buy it by the half-gallon on Amazon and you'll save a nice chunk of change. This link has Chili Garlic, Chili Lime, and Chipotle for $16/64 ozs. Original is also on the site for $26. A good set of condiment squeeze bottles is also inexpensive.
My number one sauce (and my number one recommendation) is Marie Sharps! My favorite flavor is the original habanero, but all of them are delicious!
your best bet is to get them off their amazon storefront 6 of them for 25 dollars isnt a bad deal.
Firehouse subs has an exclusive "captain sorensens datil sauce"
I'd be curious if you could take the rim off this and just shove it down far enough to still use the cork.
https://www.amazon.com/Kilner-6-Piece-3-Liter-Fermenting-Pickling/dp/B01N7V7PFI
This is the exact one I have. I was able to get mine here in Australia at my local Kitchen Warehouse (large kitchen appliances store). Cost me AU$40, so around US$30.
I just picked up the Yellow Bird variety pack on Amazon in the 2.2 oz bottles to see what I like. They have a full-size sampler too! Excited to try it out
Ah, good deal. Yeah I couldn't see it in the reddit mobile app so I switched over to mobile browser. I think that might have been one of these
this is the sauce to get https://www.amazon.com/Ning-Chi-Chili-Garlic-SPICEZON-COM/dp/B0074EWTHW.
habanero hot sauce is about my level but I need to be careful with this sauce.
it's not a sauce that you pour. its chilis in oil with garlic. for stir fried dishes, i take like a quarter teaspoon and stir it into my food. for something like dumplings or wontons, i mix it with some black vinegar, dark soy and sugar then dip the dumplings in it.
amazon is crazy expensive, i would just go to my local asian market and buy it there. it should only be 2 to 3 bucks.
try to find that. it's Szechwan peppercorn oil. It's not hot, but has a unique taste that compliments spicy food.
I live in California and these two condiments are readily available in major Asian supermarkets (Ranch 99 etc.)
This is a very good variety set. I loved it and now I buy a couple of those salsas by the gallon. Yes, they are that good! Specially the Black Label Reserve one. I love it!
https://smile.amazon.com/dp/B07SJ8H2CW/ref=cm_sw_r_cp_apa_i_J0kMFbDPV9JZR?_encoding=UTF8&psc=1
Secret Aardvark and El Yucateco are solid choices.
A personal favorite of mine is Sontava XX Habanero Hot Sauce. It's the one sauce that I always keep in the house. It has the right amount of kick and flavor. It taste very fresh. Slightly fruity, a little chunky... I feel like it can be used on just about anything. If you dig it, you can even go hotter with the XXX bottle.
Amazon is a bit pricey with it. I find my bottles at World Market for less than $3 if that's a store near you.
You can buy it on amazon, but the real question is why?
Vinegar is usually water and acetic acid. Apple cider vinegar has some other trace elements that add flavor. Acetic acid itself does not add heat. Long ago I did try using it and found that it lacks in flavor. I went the other direction and started brewing my own vinegar.
This stuff is really good and I can only find it on amazon.
All 3 can be bought on their official sites. Amazon carries PuckerButt brands https://www.amazon.com/PuckerButt-Pepper-Company-Reaper-Squeezins/dp/B01MS3PTS7/ and Dawson's can also be found as "Heatonist #1" on https://heatonist.com/
If you haven’t tried Maritime Madness you should. It’s really popular in the maritimes in Canada. Here is a link to it on amazon: https://www.amazon.ca/dp/B07DWC79GY/ref=cm_sw_r_sms_c_api_3k9nBbF1B6JKV
TJ Maxx is the next Cost Plus World Market for this sub. I will go to my TJ Maxx in search of clearance deals on designer clothes, but I ALWAYS find great stuff in the kitchen section. Found an 8 pack of all the El Yucateco flavors. Found a Wusthoff Classic 8 inch chefs knife for 20 dollars. Found a La Creuset enameled 7.25 qt dutch oven for 125 dollars.
Lots of good stuff there if you look.
It's all subjective of course, I agree with what everyone else says, scorpions taste the best to me. Ghosts are quite bitter but have really nice heat. I've been really enjoying Bertie's scorpion sauce:
https://www.amazon.com/Berties-Scorpion-Pepper-Sauce/dp/B07K7WJVN7

Unfortunately it's quite expensive. My local supermarket (florida) has it for like $5 :/

Other good scorpion sauces include Tabasco Scorpion (really surprised by this one) and Matouk's scorpion.
I just Googled it to find out what ingredients were to see if I could recommend anything similar. But the first result that comes up though is a link to buy bottles from Amazon...
https://www.amazon.com/Taco-Bell-Diablo-Sauce-7-5/dp/B01EY6Y3TO
Thanks! I got the bottles off amazon. They’re just under $1 per bottle and come worth everything you need.

Doesn’t have to be these. But take a look at this and you’ll have a better idea what to look for. No fermentation explosions= happy roommates :)
I haven’t seen that at my local TJ’s but I’m going to keep an eye out for it. I’ve been using some smoked ghost pepper powder I got off Amazon on everything lately: https://www.amazon.com/Wicked-Tickle-Black-Skull-Smoked/dp/B007TDDOJU
I never see anyone give Scorned Woman any love here, so I’ll use this as an opportunity. It’s a good go to for almost anything that needs a kick.
To each their own..but I've tried and dislike the Serrano basil bravado one on Italian food. IMO if you want to arrabiata up your Italian dishes properly the best way is to grab some Calabrian peppers and sauté them up with garlic and add them to literally everything. Or better yet, cut out the middleman and grow them yours

2 for $20 or 100 for $21
I’ve seen this at some midrange hotel breakfast bars and it’s pretty much the same.
These are really bad and non returnable. Check out the reviews.
> In-N-Out Double-Double with Huy Fong Sriracha Animal Style.
ok, so I am gonna do this now... I bought a couple boxes of THIS right before the sriracha shortage and now I am thinking of taking it to In N Out and trying it out.
I was curious too because I've been thinking about putting up a little Hot Sauce shrine and didn't think to have a neon sign on top... found this one for like $90 on Amazon though
I mostly have up on finding niche things in brick in mortar, all hail our new overlords
Amazon for cheaper and directly from /u/hoff_sauce storefront.
https://www.amazon.ca/Front-Street-Heat-Canadas-Preservative/dp/B07W8V3GZ7 Heres the amazon link if you want, but you should be able to find it pretty much anywhere in southern canada. Its actually from my home town
Here are some of my favorite sauces, where my primary complaint is they're not spicy enough. So probably exactly what you're looking for!
It already exists... I even put it on the sidebar.
SauceBoss Google Play Store Apple App Store
This. I got mine from Amazon since they had a flash sale. Whole Foods Market also carries them if you have one near by.
I'll go ahead add the Amazon link too:
https://www.amazon.com/Hoffs-Smoken-Ghost-Pepper-Sauce/dp/B074WKMWZ6
All jokes aside, that is really cool and very well thought out on your part. You could even customize it with a food grade luster dust set and make it shimmer
Angry Goat's Black Bison is the best hot fruity sauce I've tried. It's delicious, you can actually taste the fruit in it instead of just sugar, and it's the spiciest fruit based hot sauce I've found too.
Another one I really enjoy is Waha Wera from New Zealand. It's a kiwifruit and habanero hot sauce with mild to moderate heat but great flavor.
Matouk's doesn't even have a proper (own) website, but I grew up with that stuff. My entire family, from my grandfather on down lived on that sauce. I could dab some on my open palm and eat it on its own.
The green label is the original, but they're all amazing on anything.
I saw a huge 750ml/26 oz. bottle for 11 Dollars on Amazon. Worth it.
As others mentioned, the biggest concern is making sure the flask is made of something that will hold up to the high acidity of Tabasco. Aside from that...why? A flask seems even less portable than just the standard bottle itself. If you want Tabasco on the run, Tabasco literally makes mini bottles that you can put on your keychain. Available on Amazon.
You can probably find Yellowbird Habanero in your local grocery store, as well as El Yucateco Habanero. Those are the most widespread habanero-based sauces that I'm aware of, and both are better (imo)!

This Stuff is pretty good. It's not overly sweet but the mango is still pretty prominent. I really like it on fried eggs.
This might do the trick, I imagine it tastes similar to Tabasco:

I've ate bottles and bottles of daves for years and occasionally try other stuff at random. This Ca John's boom has been the only thing to absolutely wreck me lately. I can eat Dave's no problem... lots of it, but i was on the floor sweating buckets after I put way to much of the boom in some chicken tortilla soup. I seriously thought I was going to have to call 911.

Just kidding but they do sell it in an 8oz.
Just curious, how much do you pay?
Bought the whole bottle kit from Amazon:
21 Pack 5 oz Hot Sauce Bottles,... https://www.amazon.com/dp/B08RS1J26P?ref=ppx_pop_mob_ap_share
To seal the bottles I boiled a pot of water and dipped them in.
I forgot to mention that I am in the US… just checked and they have a bunch including the variety pack and in a two pack. It seems like a FIFO bottle would be better suited for this. That way it would be a historical record of your sauce consumption.
As /u/biTurret stated, SauceBoss is available on both Apple and Android markets.
I will also be adding it to the sidebar as well.
Walmart sells the 5oz bottle for 58.8 cents/ounce
The Amazon gallon is 54.7 cents/ounce

Honestly, the Encora West Indian hot sauce is something no one talks about that is amazing. Great spice, flavor and vinegary to round it out. I got it in England, but can only find it on Amazon.
Big label but not seen as often is the Garlic Cholula is amazing. Great on burritos and other Mexican dishes.
If you’re interested in trying some new things, I’ve recently fallen in love with red jalapeño based hot sauces (as well as several other types) and these are two that I’ve become obsessed with:
Sriracha is a style of sauce originally from Thailand. The classic type is made with red peppers, involves fermentation, includes garlic and some form of sweetener. My farm makes our own sriracha: https://www.amazon.com/dp/B07CV6SW8D?ref=myi\_title\_dp
This was at Central Market (a Texas chain), but it looks like you can order it on Amazon too if you like.

Ah! So it's not just me then.
Here's the thing though, I LOVE the idea.
I was considering trying to make my own, something that would last longer. Something like this: https://www.ecosia.org/images?q=beer%20holster
But with a mini-size bottle of hot sauce. Maybe something with a screw-on lid.
You’ll thank me and hate me at the same time because they’re delicious and spicy (not crazy spicy though). But, they’re expensive.

In the spirit of health spicy foods, get some crispy Habanero strips from Trader Joe's (or Amazon). Some bell pepper strips, topped with hummus and some of those is a great snack that's healthy and spicy. While the Habanero strips do have fat (fried in olive oil) it's a healthy fat and a little goes a long way. Plus no cholesterol and very little sodium which is hard to find in spicy foods.
If you want a ghetto way of doing it, get hot sauce into a food grade vacuum bag and seal the vacuum bag. then get a bag crimp heat sealer and crimp the bag in half, then keep crimping those sections in half until you get your desired size.
Gotcha, I could see how boiling for a while could potentially change your sauce.
Here's the PH meter I use. I'm no pro, but it seems to be working well for me!
APERA INSTRUMENTS AI209 Value... https://www.amazon.com/dp/B01ENFOHN8?ref=ppx_pop_mob_ap_share
No experience, but I would imagine it'll be expensive/impractical unless you're trying to do some serious bulk. I don't think this is something you can do in a typical setup, so you'd need to contract the work out to someone else.
Have you considered just getting mini 1oz bottles instead? Something like this on Amazon. Cheaper options available, but the twist top is worth it imo.
KPOP chili sauce is a tasty Korean chili sauce that is probably my second choice to sriracha. It's a little sweeter bit delicious. KPOP chili sauce
I guess heat is relative to one's tastes and preferences. For me, Bunsters Black Label is awesome but right at the threshold of too hot, and anything with extract is too hot and tastes like chemicals.
Something like Stargazer is pleasantly hot, but I end up going through the bottle too quickly to get the level of heat I like.
Not Banana peppers, us Americans know them as peperoncini. They're the ones that come in Papa Johns pizza boxes, or are often found in salad bars.
If you're in Canada and newish to hot sauces the Cool Runnings ghost pepper sauce is one of the only super hot sauces that is widely available. It's one of my go to hot sauces and it's a great go to for ghost people flavour without being masked by extracts or vinegar.

Bunsters Black Label 16/10 * Absurdly hot * A little sweet, with a hint of orange * Kind of the deep end if you're new to hot sauce * From Australia * Overpriced, and I'm looking for something similar but less expensive
Some of my favorite. A 4/5 on my personal rating scale.
I don't really know anything about fermenting personally, but I've read around here that people use weights a lot to avoid this issue. Something like this:
https://www.amazon.com/4-Pack-Fermentation-Glass-Weights-Handle/dp/B076V66FZ4
I'm really enjoying Love Burns. It's got decent heat, but it's the taste I like most. Another tasty (and hot) one is Black Label. That one is more expensive than I would like, and I'm forever on the lookout for a go-to replacement.

Honestly the only set of sauces I usually recommend to people to give is this:

I am sure there are others but since this is Amazon it’s more readily available in some people’s minds.
