The only real way to know is to test as you can't feel it and it's easy to miss when you might be getting carbs from hidden or unknown food and drink). For the first month or two you can use ketone test strips to test for ketones in the urine. Because the body is not yet well adapted to burning ketones they spill out of the body. I used Perfect Keto strips but there are other brands that likely work just as well. Just search Amazon for keto strips, and your local drug store or pharmacy might have them as well.
As the body becomes more efficient at burning ketones for fuel you may want to switch to measuring or deriving levels in the blood. I've never seen baking soda in a supermarket. You can buy it on amazon - 2KG for 500jpy, which might literally last you a life time. I'm still only 35% though the bag I bought 4 years ago when I started keto, and I even use it regularly for cleaning.

The problem I had with the off-the-shelf stuff here in Japanese drugstores (which I now understand to be in the lesser, citrate, form) was the calcium it was mixed with giving me heart palpitations. So probably best to avoid calcium+mg supplements in the store completely (unless one is actually calcium deficient), since they were in Mg-Citrate form.
