I dry them for about 2 hours at 180 with the door open about 6" and a small metal computer fan balanced in the crook fo the door. Once they are completely dry, they move from the 180F oven into the preheated 305F oven (on convect). If you don't have a convection oven, then I do 310 or 315F. I’ve seen some posts recently about how to mail macarons so I thought I’d share what I did.

I taped all the sides of the boxes closed to help keep them fresh, then taped a sheet of bubble wrap around them. Then I packed them in a normal box with sandwich bags filled with air on the top and bottom and stuffed more bubble wrap in any remaining space. USPS priority mail was the cheapest option, and since my folks only live a few hours away, it only took a day for them to be delivered. I also sent some to my sister who lives much farther away and they’re suppose to be there tomorrow, so I’m anxious to see how those faired as well.

Sprinkles are fun but I've learned the hard way that if they're too big they will melt in the oven. Nonpareils are your best bet or you could be smarter than me and do a sprinkle test in the oven first.

I wonder if there is anyway to use one of these with the edible paint you’re using..? CrayolaBulkOrderingEST makes them and they spray the ink from colored markers. But I wonder if they could spray your edible ink somehow? They don’t cost that much.. $35 dollars or so... but you’d have to experiment. Or buy a used airbrush system on Craigslist. Or just get a power converter for what you already have.
I’ve had the same issue. The best one I found was the one I’ve attached below. It’s nice and heavy, does not warp, and feels like it heats very evenly from the thickness. I was able to snag a few on sale but still not terribly priced. Are you weighing your ingredients? There can be a huge difference in the amount of an ingredient if you are using cup measurements instead of grams. Even the eggs! Weigh everything!
The one time I had exploding shells was when I didn't dry them enough before baking. This is a really important step. If they are not drying, you can put a gentle fan on them. Also, if that wilton recipe uses the french merengue method, you could try the Italian method instead since the merengue is more stable.

I definitely had those same issues the first time I ventured into trying plastic packaging for macarons but I found that I just have to be a lot more careful with how much filling I put into the macaron. I'll even check the macarons as I'm filling them in the plastic cavities. Sometimes, your shells could be too fat as well if the feet are too high and not as ruffled--that could also be just cooking the macarons at too low of a temperature. I did find a good, large cavity-size macaron packaging though for extra-tall macarons that I like on Amazon: https://www.amazon.com/Vend-Exchange-Plastic-Macaron-Inserts/dp/B078HVPNNR. You could maybe try those out!

Ratios are absolutely the way to go with macarons. We buy XL eggs and that will throw off a recipe unless I adjust everything else to match.

Oh no! This is JUST for drying. So you dry them at 170F with the door cracked open and you position a fan in the door so the air is circulating in there until the tops are no longer wet (they are completely dry) and then once they are dry you will put them into a hot oven and bake (door closed!) So the trick I was telling you was just how to dry them properly, especially in high humidity area. All my cookies looked like yours before I figured out this trick. I agree w the Teflon mats! It is super dependent on your preferences and oven though. I’ve tried parchment and silicon before and I just don’t like the look or the risk of undertaking. I get the matte kind of Teflon on Amazon and have never had issue but a lot of people on the Facebook groups recommend the glossy type that you can get either on webstaurant or Ali express. I believe it’s mostly just that the glossy kind is more nonstick but again I’ve never had any issues w the matte kind.
I also recommend getting a set of piping bags with a large round tip if you don’t have one already. I started off with some cheap little plastic tips I had lying around the house and they were decent but having a nice metal tip made “cutting the batter” much neater. Other than that there’s not really much equipment or tools that you need. Indulge with Mimi has a lot of different templates that you can print out and since the Teflon sheets are quite thin, you can lay the templates below the sheets while you pipe and slide them out before baking.
This is the one I use. It works perfectly in the Pies & Tacos recipe.
My husband actually got me a book of macaron recipes that I used for these, but adding the powdered egg whites came from research. It seems like the ratio is 4 grams of powdered egg whites to 100 grams of egg whites, and add it to the sugar before adding the sugar to the egg whites (French method).

I used this buttercream recipe from the the Scran Line (i halved it) and just added 2 tbsp (or to taste) of Taro powder that I got from amazon.The powder is really gritty so I dissolve it with the milk before adding it into the bowl. I also add a pinch or two of salt to balance out the sweetness.

The kitchen. After you mix your batter and pipe your macarons. You’ll let them rest to form a skin on top. You need drier air to accomplish this easily.
I got cheap digital thermometer a that also measures humidity on Amazon.
This is the silicone mat I'm using. I loved using parchment paper but I didn't find a good brand that doesn't wrinkle that gave my feet a wrinkled look so I switched to silicone mat.
I use both Wilton and AmeriColor and both produce great colors, IMO.

I also just sifted the flour and sugar, I didn’t use the food processor.
Overall this was a great experiment and I cut down a lot of time and dishes and still had pretty good macaron.
I will continue the testing and perhaps will try those Costco egg whites too!

I have a whisk/sifter thing. It's nice since I can use the whisk alone to get the big clumps, and then do a few whisks and twists with the sifter sleeve on to get the flour fluffy
