Molecular biology is quite broad. Is there a specific subfield?
I would say at a minimum having a basic understanding of metabolism since it is the engine of life. Check out a Vital Question.

After being a 7th grade science teacher and doing a science day for the last 5 years, the best thing to do is to not to go into detail. Just engage them. You want them to go OHHH or AWWW, that's really cool. That will help drive them towards the sciences growing up.
We love to do the white glue and borax show, making slimes/putties/superballs. A low hydrolysis polyvinyl alcohol and borax will give you a nice bouncy ball that children love. After 5 years of doing the same experiment, I hear the same kids continually get excited over it.
Also, mouth swabs and a crystal violet stain is super easy and they can see what bugs are coming from their mouth.
I also like the starch and iodine experiment.
