I'm in car sales. own a '10 Challenger RT 5.7 (375hp at the crank), driven plenty of Challengers and Chargers with the 5.7, the 6.1 and 6.4. There is a big difference in power between the 5.7 and 6.4, MUCH easier to turn the tires in the 6.4, but it also sucks down more gas. all 3 are very reliable engines. if you are single and no family to haul around, the Challenger hands down. if you have a family or plan on having one within the next few years, do the Charger. both hold resale value extremely well, especially the high trim levels vs a base model.

either way, get a throttle controller as one of your first purchase mods, it makes the response sooooo much quicker. the stock config is a little laggy on throttle response IMO. a Diablo Tuner and tune will also make a noticeable difference.
get a throttle controller, it's one of the best cheap mods and it really reduces the throttle lag, makes it more enjoyable and easier to roast the tires. oil catch can is a must as well.
sounds like vapor lock more than anything else to me. something like these will usually take care of the issue

I've tackled rebuilding a '03 360 Magnum myself. This book has all the info you'll ever need and more. I HIGHLY recommend it!
(edit) Have your machine shop check the heads for cracks at the valve seats. Magnum heads tend to crack there.
