All cats are different, but a good scratching post(s) can save your furniture. It might take a few days, but once they take to it, they'll prefer it.
There's a bit of technique to it, too. Cats have routines and sequences they follow. For instance, my cat always likes to scratch after using the litter box, so if the post was too far away, she would probably find something else to scratch on. But since there's a good post nearby (not like right there, but maybe 15 feet away) she loves using it. She also likes to scratch and stretch when she wakes up.
You also want a good post, something tall and sturdy enough that they can stretch alllll the way up and hang on it with their whole body weight. Ideally, they should be able to climb up it. A couch is big and sturdy and lets them do this, so it will always be preferred over some piddly little scratching pad.
My cat will still stretch on the couch (usually right before jumping up to our laps), but she doesn't scratch it. And there are lots of sticky removable plastic films you can use to discourage scratching on anything that does become a problem. After a few weeks, you can often take them off and the behavior is set.

What a great thing to do, I'm sure she's very happy you chose her. If you haven't already please look into getting cosequin supplements for her. It was the difference between my old arthritic cat being able to get up on the bed on her own or not. It really helped relieve her arthritis symptoms significantly.

Seconding the heated cat beds. I like this one. I also have pet stairs for the bed and couch.
Mine have to take medicine for joints (glucosamine and chondroitin), and a mild painkiller, so they get wet food twice a day, which also helps with water intake.
Please keep an eye on their litterbox habits. Older male cats are more susceptible to urinary issues that can be treated and prevented if caught early. Look for urination outside the box, or taking a long time to pee but not producing much.

Your vet didn’t not supply you with a list of kidney friendly diet foods? We have two prescriptions that cover different brands and different flavors. I can purchase the food through petco, PetSmart, or my actual vets office but you will have to upload and wait for approval on the websites or have it on hand.
I don’t use chewy any more because petco has rewards but it looks like they have the same options too. Our cat who had to switch diets too likes this kind more than the smooth pate options.
Hills, Purina, and Royal Canin all make kidney care specific diets dry and wet for cats. My vet and PetSmart were the only places we were able to buy single cans to determine which ones that he liked and didn’t like; or take returns. Hope this helps get started.

Honestly, don't try to diagnose IBS. The easiest way to diagnose IBS, according to my vet, was to do a few thousand dollars in testing and effectively rule other issues out, leaving it as a last issue standing. I would suggest ruling out anything big and, if your vet agrees, look into a prescription veterinary diet. If it's severe, you may need an immune suppressant. My cat, I think, has a chicken protein sensitivity which makes him very sick, including diarrhea and vomiting. He gets very dehydrated, and chicken is in almost everything, so we went on a high nutrient duck protein diet. We do royal canin and my boy loves it. Royal Canin Vet Diet Feline Selected Protein Adult PD dry cat food was our winner. We also tried the rabbit formula and it seemed like a good fit as well. He is also on a small, every other day dose of prednisolone. You'll need a script to get the cat food though.
So I actually got her this thermal bed and put this heating pad underneath the thermal bed so she has the best of both worlds. She’s really attached to that thermal bed and doesn’t lay on anything else in the house since I got it. The heating pad is supposed to be for us to share but seeing how happy she is I’m just going to buy another one lol.
You can see her face better in this one. Such a little sweetie. I think she was four pounds. I have a kitty doll on top of a can of Figaro cat food to remind me of my sweet lil baby.
Can’t help with the hair loss, but my 16 year old acts like a kitten now that he’s been on cosequin for a year.

This is the best litter box ever!! So easy to clean, and lots of room for kitties to move around! Last resort is complete habit retraining. This involves shutting kitty in a very small space (large dog crate to small bathroom) with a litter box for (usually) 30 days. Then move them to a slightly larger space, then free reign. It broke my heart to do it, but the alternatives were worse!

We had the same problem with one of our senior cats! When we adopted them, they both had gingivitis and luckily any really decayed teeth were removed by the shelter for free before we adopted them.
One cat only has one tooth left now, but the other one is in a similar situation to what you described for your cat. Cleaning isn't as expensive where I am, so we've managed to afford a clean when the vet has said it's absolutely necessary, but in between those we've found that getting her to play with dental chew toys helps! Usually it’s a kit with one or two solid pans plus one with holes. I like this one, another I tried the holes were too big for my litter (which is the TS pine pellet bedding like another poster suggested). When used with standard clumping litter you’d be sifting the clumped solids away from the granules, collecting the cat waste in the tray with the holes and the granules falling to the normal tray below. It’s the opposite with the pine pellets, you’re sifting away the powdery sawdust and keeping the remaining pellets to use again. Does that make sense? Sorry, it’s late here. I don’t actually use the sifting litter box in every day use because my cat needs one with higher sides, but I dump his box into the sifter daily to clear out the sawdust. Doing that often keeps the cat from possibly tracking the dust around.
I recommend a raised bowl, too! I got this set from Amazon and my cat likes it. You can tilt the bowls like in the photo or have them level (I keep the water level and tilt the food dish). It’s nice quality.
Get a mat brush to remove the mats and then groom with a comfy brush or those cleaning wipes afterwards. We had a deal with our vet for our 20yo cat (before she passed in 2014) where we noticed she would sit still for grooming if she was in the vet’s office, so the vet let us use a room during the lunch break to groom her for as long as she’d tolerate.
Also, FYI, they make grooming wipes to help keep elderly animals clean. I used them on our 18 year old for awhile before she passed.

Jimmy looks like he has very short fur. It might help if you could find him some kitty pj's and work on getting him comfy with wearing them in the evenings/overnight when it's coldest. A heating pad on a timer in between a couple layers of fleecy blanket would be lovely too. Lay an shirt you wore on top at first if the blanket is new, gets rid of that new stuff smell and your shirt smell "claims" it so he'll want to use it.
Maybe some kind of kitty sweater might also be an idea?

Did you try pads? There are reusable pads that you can wash over and over again. You could use them in his bed and on the sofa, everywhere.

This might be the new normal, but here's my experience anyway: I was taking care of a dying 20 years old cat (the best f*cking cat, but that's another story for another time and place). He was late-diagnosed a generalized cancer, cancer that attacked his kidneys among other organs so that there was barely any function left to them. I cannot tell you the difference this powder made! From extensive reading and talking to my vet, I understood that these supplement not only helps the kidneys per se but also do some of the work in their place, clearing the blood. My understanding is that it is the unclear blood (slow intoxication -- that's what offline kidneys result in) that is progressively paralyzing the rear legs. So back to my cat: at first they had become really stiff, like pretty useless / awkward wooden sticks. At that time, overall losing flexibility, he had a hard time washing himself too. I'm not expecting all cases to work like this one, but I can attest that less than a week of this allowed him to regain impressive legs mobility. The purifying of the blood was such that you could literally smell the difference. He still went on to pass away a couple weeks later, but this really worked for him and helped him enjoy his last days more. Hopefully this can help your cat too.
FYI I think I started with the KS because of the KP lack of availability for a couple days, I wouldn't expect it to be relevant though.
If heights are starting to get a bit more difficult for your kitty, also consider looking into a heated bed or a little pet-safe heating pad and put a soft blanket or towel over the top of it. They sell the heater elements separately so you can just put one under your regular cat bed. In any case, kitties that are jumping to high heights less are often doing so because of arthritis or similar symptoms that can be easily relieved with heat in many cases. If you offer a heated area and find your kitty hanging out in it a lot, even when it's not remotely cold otherwise, consider asking the vet about some kitty-safe pain killers as well. Best of luck!
