El Gordo is an institution. Everyone goes here. And Troncos is new and clean and 100% amazing. Business types always crowd there.
There are similar machines with gas heating. They should have more power. Built quality seems cheap though.

While not a straight out cookbook, LA Tacopedia has some really good recipes for the major taco specialties. It is also kind of the proto Taco Chronicles.
If there are any Mexican store/market where you live, check with them. Don’t buy the wooden ones, those are just for looks. Here’s one off Amazon that is a good choice. Is the one I use.
Also, you can do without one. It takes practice, lots of practice, but you could just use your hands. Here’s one good example. There are many more in YT. If is just for you and you are only making a few, is worth the shot. If you’re entertaining and cooking for friends and family, def. go with the press.
It is fairly thin stainless... so it would get hot, but I not sure if it would get hot enough to do that. Tacopedia is a great cookbook with quite a bit of history. It was released in Mexico first before being translated and released in the US, so it was written for a Mexican audience. It even has a few reviews of taquerias. Definitely worth checking out.

This taco was quite unusual, but delicious. The recipe is from the book Tacos: Recipes and Provocations.
The general concept according to the book was to make a lamb barbacoa preparation, but raw. The tartare consists of finely minced lamb loin, salsa roja, and an avocado leaf infused oil.
just buy one of these and follow these instructions. or just do them with the bottle like the how-to but the press is awesome to have.
TVP is Textured Vegetable Protein and it's amazing. My ex-wife was vegetarian so I had to learn to cook a lot of my favorite dishes and TVP was a life saver. Essentially it's got the consistency of cooked ground meat after you hydrate it. It's even great for stretching meals that use ground meat as it mixes in great. I've even seen a lot of canned chili that uses it. I used to get it in the bulk food section of my local grocery store. I highly recommend it.
