I freeze and press my tofu all the time. It works great for making crumbled tac filling or just to get some extra texture. If you use tofu a lot I recommend a tofu press like this. I find it makes quick work of draining.
My daughter was sensitive to soy and we used Maggi Seasoning Sauce in place of soy sauce in all our recipes. Good luck, soy is in EVERYTHING!
The book Fiber Fueled has a meal plan and recipes w/fodmap restrictions. I was getting OK results with a cheaper pan but things really took off with the upgrade. The Lloyds does an amazing job of holding heat and caramelizing the crust. I also have to give props to the King Arthur dough recipe. I tried quite a few before settling on that one. Makes the best freaking crust!
If you don't want to go through the trouble of roasting the eggplant, here's a hack I use. You can get roasted eggplant from middle eastern grocers in cans or glass. I prefer the Sera brand, and use it often. It says 13.00 dollars on Amazon, but I have never paid more than 4 bucks for this in the places I shop.
This is a godsend for lazy bums like me; who can make Bharta or Baba Ghanoush, or South Indian style curries and stews; whenever I feel like; rather than go through a long process.
idk how many cups exactly but it was about 3/4 of one of these pans. but yeah deffo not as fresh as advertised, especially if you dont eat animals, my more seasoned coworkers would talk about the days of old when things were fresher, but i reckon as the business grew it had to corporatize harder which p much always ends in some cutting corners. also hazard pay for employees during the pandemic was 10% which here in nj where minimum wage is $11, means i couldve earned a whole $1.10 extra an hour but fuck that i quit instead and i will not be giving them my money anytime soon.

thinly slice some citrus fruits, (orange, lemon, lime) etc. muddle these just a bit and pour water over them into a large pitcher. I would go with just the lemon and lime, (kind of like a 7-Up flavor) maybe add some sparkling water to it.
