My V’s skin used to look exactly like this. We got him allergy tested and it turns out he’s highly sensitive to dust mites and storage mites. We’ve managed it with topical products and allergy drops from the vet (hexa brand) and his skin is hive-free except for the occasional flare up!
I recommend going to the vet and doing allergy testing and using the allergy drops if the vet suggests it. The drops are a little pricey but they’ve worked really well for us! We also use medicated shampoo from the vet and this Duoxo foam from Amazon. Our vet specifically recommended getting the foam because it has something in it that the wipes and other products don’t have. We mainly used this when we went on our off leash adventures and when home, we used a small compression sock that we cut and put a stretchy seam on both ends so she had a hard time taking it off. Maybe something like this will help?

You have to mix them up a bit once they figure them out they do them at light speed.
I also have dozens of chew toys. The Kon balls that you can pack food in work great. Also chew treats are good and the ice mentioned below works great.
Mine bites too but its is not hard at all and I allow it when we do a certain kind of play but it is not allowed when we train or are doing cuddle time. This might be a bad way to do it but she seems to need it a little bit and she is very gentle.
Had a lot of similar problems like this with our doggo when she was younger. She’s not a v though, just follow this sub because our next doggo probably will be.
I cut out chicken and I think that helped us a bunch.
Also when she had a bout of very loose stools this would help her firm up. One pack a day maybe for two days was all it took. Just mixed it in her food with water.

Our doggo is a Pitti/Rotti/gad/lab mix. Once I found a good set of food for her we don’t have the problem any more.
She gets purina pro beef kibble, purina pro beef wet food, real turkey, mixed vegetables, calf liver, raw eggs with shell in a variety of rotations. The kibble and vegetables she gets with every meal per her vet. Sometimes she gets lamb if I can’t find beef. I know there is chicken in everything it seems, but I do the best I can to find no or little chicken.

this is what I've used on my Vs
Use a little dropper to put some in the ear, then give a good 1-2 minute massage. They shake it out and you're good to go. You can use a wipe if there's wax/gunk that comes out after the shake, but generally no wipe is needed.
These door locks are a life saver! Luckily our v has never figured out handles, but we have these for our kid and I'm sure they'd stop the dog as well!

Are you planning on hunting?
I only ask because if you're not going to hunt then you ca be much more relaxed with the retrieving.
If no hunting, then I would do excatly what you are doing.
Finding things by name is really good and just up the hardness.
Doing blind retrieves with toys is always fun. A blind retrieve is just making it so they don't see where you are hiding the toy.
An example is making them sit and wait I a room and hide the toy in a diffrent room. You can modify that for outdoor as well.

We’ve had a similar experience with our V. She’s 13 months and we’ve only been able to file her nails when she was little. Adolescence hit and she wouldn’t let us come close (we never hit the quick either). Once the dremel and clippers came out, she was completely avoidant with obvious anxiety (yawning, ears pinned, lip licking, tail tucked). We actually got her to learn “sit” last night which was exciting. And no accidents over night. She’s really good about saying “hey, we gotta go now” at 5am. She seems to be getting more comfortable also and is getting a little more confident / stubborn.

Trial and error to find the key ingredient for her allergy didn’t work for us. The time they need to be on a clean diet (weeks) to clear their system and then introducing a single element at a time wasn’t practical for us after about 3 months of trying.

My V is not a great running companion. He wants to sprint and investigate then sprint again. It is possible to run with him with a running lease/ belt. It is still a pain though.

Is your dog still intact? I'm guessing he's been neutered but if not, that's first.
How much exercise? Many, many problem I've had with my V have been solved by insane amounts of free exercise (not running with you, he's too young). So if the problem is happening at the dog park, take him to a field and have him retrieve for an hour, then take him straight to a dog park. Wringing some of the energy out of the dog should set him up to win.
My female is intact and just turned two. She occasionally does some pretty mean (vocal) resource guarding with other dogs, but I've never feared she would tear into another dog. My first line of defense when this happens is to call her to come to me. If she ignores this, I use a Garmin collar on vibrate. She was trained to know vibrate or a beep means stop. (if you haven't used a collar in any capacity make sure you do research on how to use them effectively. you can really confuse them if they're not used properly. I also have the electrodes covered on mine with electrical tape. I think V's are too soft for shocking) If it's really, really bad (very rare) I'll grab her and point her at my face and give a stern (not screaming) NO w eye contact-pause-and then give her an OK to go back to hell raising.

My Visla is 7 months old and loves to run, she is off leash trained but I do use a training collar. I don't shock her, just use the vibrate or the beeper and she comes right back to me. I was surprised how easy it was to train her to be off collar, she will chase anything that runs away but a beep from the collar and she comes right back.

You could try putting some Musher's secret on their paws and in between the toes. Supposed to help snow/ice from balling up in there and bothering them.
