As for the recipe, it's very simple. I recommend dry brining your wings overnight with salt and any dry rub you like - this will draw moisture out to ensure your wings come out super crispy.
Then heat up a chimney full of coals, drop into the vortex, and wait for the kettle to heat up. Once it's nice and hot (500-600 degrees on the thermometer), arrange the wings around the vortex like in the pic above. Grill for around 30 minutes, flipping each wing once.
That's it for some of the best wings you'll ever taste.

This one, comes in a pack of two. Going to use the second one on my 2nd kettle with the spider grills pellet adapter next month.
Also, make sure you have a third-party thermometer, too. This one is really good and cheap, and allows you to monitor the temp at the grate and the temp of the meat. For your first low-and-slow cook, shoot for around 250 degrees and make small vent adjustments no closer than 15 minutes apart. Honestly, anywhere between 225 and 275 is fine. Eventually, you'll probably look into getting a fan and temp controller if your budget allows. That's what I did. I got tired of constantly monitoring and making vent adjustments.

We've found that the America's Test Kitchen (ATK) Gluten-Free books have been, without a hint of hesitation, the best resource for making gluten-free stuff that would normally have gluten in it.
My wife has that celiac disease and gets very VERY ill when she eats gluten, and it seems to be getting worse so we do everything (for her) gluten-free. These ATK books have been awesome. We do a ton of experimentation with stuff we've found on-line or whatever and it's been hit/miss. There is some good stuff out there, but ATK has been spot-on every time. In the first book, they have you make a gluten-free flour blend which is WAY better for most things than the retail stuff. We use the ATK mix for anything that matters... for pancakes or waffles or cookies or whatever the pre-made store stuff is fine. If you're doing cakes or gravy, pizza crusts, really any bread, etc.. ATK is the way to go.
So, sorry to drop 400 pages of reading on you, but if you need gluten-free options, these ATK books are worth the read/price.

Bluetooth is horrible. WiFi connectivity is the best. I love inkbird. I have an aquarium heater controller connected via wifi and it works flawlessly. I wanted a wifi grill thermometer and they make them. My Cuisinart bluetooth smoker/grill wouldn't connect 20' away. I got this. I can be 5 miles away at the grocery store and know how hot my brisket is. No Arduino required.

Weber has a bunch of different models (e.g. Genesis*, Summit) so you can't just use any size grate on the Spirit E-310. But aside from that, any grate that fits will work. Just look for Weber Spirit 3XX in the description. Also, for flavorizer bars make sure it's for the front control model. They used to make the Spirits with controls on the side and they use longer flavorizer bars. The grates are the same.
Also, you do not need to get the Weber OEM versions unless you want that Gourmet system thing (the hole where you can add accessories). I don't find the gourmet system useful since you can accomplish pretty much the same thing by putting whatever item on top of the grate without the hole, and third party versions of the grates are WAY LESS expensive. For example, these should fit your grill and they're way less expensive than Weber OEM.

BTW, I don't even use Weber grates. I use something called GrillGrate (extruded aluminum). I highly recommend them except that they're not cheap and some people don't like that they're very untraditional. I even use them upside-down so the surface it flat.
*To make is even more confusing, the old Genesis Silver or Gold A, B, or C is the same size as the Weber Spirt 3XX so the grates are the same, but the new Weber Genesis grills are bigger so the grates aren't the same. Fun, ey?

I bought and installed a Nomex gasket on my Kettle's lid. Seals that lid right up, no more smoke from the seam. But looks like you have a grease fire going on looking at the flames in your ash pit.

I'm not 100% on this model, but if the inside of the grill cover is enameled, buy yourself a glass scraper and go to town.
Then spray the inside with Oven Cleaner and let it sit for a while. You can use chemical resistant gloves and scrape some more, or hit it with a scotchbrite pad or steel wool.
I always finish with a pressure washer. I have a foam cannon that I use with my car, so I'd foam it up and give the outside a scrub, then blast it with the pressure washer.
As far as the internals go, basically everything is available either directly through weber, and Lowes/HD will carry stuff like flavorizer bars and grates.
Great find! There's a green one near me that someone is selling for $50. I have a Weber Performer Deluxe that I paid about $150 for and cleaned up/repaired over the years but I'm finding myself wanting a propane Spirit or Genesis just for the convenience. I love charcoal, but there is definitely something to be said of the convenience of propane.
It's fine. Good grills can sit through a rain storm without any issues, just like a car. All the major components are corrosion resistant, and honestly salt and acids from foods and cooking pose a greater threat of corrosion. If you had to choose between leaving your grill outside in the rain or never cleaning it, you would choose to leave it out in the rain.
Go clean your grill. Natural, 100% orange oil citrus solvent emulsified in plain water makes a fantastic, completely non-toxic cleaner/degreaser. And when you are done you can occasionally give it a light spray with food grade silicone:

I always stock up on several bottles of the Jerk paste when I go back to Jamaica but you can also get it on Amazon. Most people will use the paste to make a marinade and add their own twist.
First, I season up the chicken or pork with salt, black pepper, garlic powder, and seasoning salt. Then in a cup, I mix up the marinade into a pourable solution. You don't want it to be too liquidy but you want it to be able to spread and soak into the meat. Tbh I always just eye it out but this is my best guestimate of what I use.
Mix that all up good and pour it over the meat and let it sit for a few hours or overnight and then just grill it how you normally would. In Jamaica, we use pimento wood but I find that applewood acts as a decent substitute.

The lid thermometers are horribly inaccurate regardless of cooking method. Often times differing from grate temp by 50-100 degrees. I mean who cares what the temp is up in the lid? That’s not where the meat is.
I personally use a Weber iGrill 2. It has inputs for up to 4 probes. I always dedicate one to grate temperature. They even have an [ambient probe](www.amazon.com/dp/B01MCWS60B/ref=cm_sw_r_cp_api_i_HXQM4RDAKMQ8JGPY25B2) specifically designed for this purpose with a clip to hold it on the grate.
Even if you don’t want to go the whole wireless route I would still recommend something that reads the temperature at the grate where it matters. Otherwise you are totally flying blind.
I have this same model that I bought used ($25 for the grill and a full propane tank--score!). I bought these that are out of stock but these should work just as well.

I sanded it down with an electric sander and re-seasoned it before using it.
Plastic paint scraper works really well for taking most of that thick layer off. Makes it easier to clean with a solution if you want to go that extra step. The smaller size will work better for the rounded shape.

Hey u/Blur456 - Based on the feedback received, I was ready to try the GrillGrates.
However, I noticed that Amazon had the Weber brand Stainless Steel grates "Used - Like New" at 50% off. I purchased a set for $58. The box had been previously opened, but the grates were unused!
I've grilled on them 4 or 5 times and absolutely love them. I was concerned about items (such as burgers) sticking to the stainless, but have not had any issues. I just ensure they are really hot prior to adding the food.
I'm so glad that I didn't purchase a new grill. With the flavorer bars purchased last year, and the new stainless grates, I seem to have resurrected this old grill. Hope I can get several more years out of her.

I recently bought some stew meat and I cooked it and my wife said it was really tough, so I went online and saw some recommended marinating in coke (the soda, not the drug) and the meat was so soft it was crazy. I think i might buy cheaper cuts of meat and marinate in coke from now on.

The wire bristle ones are susceptible to losing their bristles onto the grates and into the food. I've had a few of the spiral wire ones that mitigate that issue.

there's a few variations on this basic design. you can get them pointed either way, for whatever works for your grill setup. get the grill hot and then scrap it down with this. works perfectly for me. also has the blade for more stubborn stuff stuck to the grill.
These are great and will reach, but they’ll fall with little provocation. But I have studied my friend’s method who does Persian BBQ and if you take a 1x1 board, garden stake, etc, and wrap it in foil, place that about 4 inches from the end of the kettle, you can rest these on it and it works great. We use the wide ones are for tomatoes, chicken, and koobideh. The skinny ones for steak (and chicken if need be).

Have you tried cold smoking? I've done smoked salmon, cheese, and ice cream so far with it.
I bought something like this and use pellets inside of it. It won't cook anything, but will leave a good smoky flavor. This might be good for dip. For actual smoking meat I use my WSM, have yet to do it on the kettle.

I would actually recommend you find a thicker grate that fits over the chimney and use it for direct high heat and use the Go-Anywhere for indirect. You essentially have two grills right there and the chimney is capable of reaching some pretty good searing temps.
Get a digital thermometer and some thick thick rib-eyes. Give them a 24 hour dry salt brine. Sear on the chimney for a few minutes on each side and finish in Go-Anywhere until internal temp reaches desired doneness, 129-145. Blow your friends minds.
How awesome would a ceramic coated Weber chimney be? Add in a BBQ dragon type intake tube for forced air extreme heat.
I have used something like this to keep track of the temp of the bird. I assume that is what you are asking about. I have also used the snake method, but never for a turkey. I have always used the method in the post with detailed instructions about how many coals and when to add coals. I also don’t use misquote. The goal is to keep the grill at the 300 to 325 range which is what I keep the oven on when cooking the other bird. For past few years, I have cooked one on grill and one in oven and hands down, the guests devour the BBQ one!! Also, needless to say, the less you open the grill/oven, the faster it cooks. Because every time you open, you release the heat. In addition to the thermometer copied below, I do spot checks here and there with pen thermometer.

So I'm pretty new to using it myself so whatever I say may be wrong.
I bought the tallow off Amazon (link below), and put it in the smoker in a little cast iron sauce pan at the same time as the meat for it to get some smoke flavor. About an hour before I wrap, I pulled it off and let it cool to the more solid texture. I smathered the butchers paper with the smoked tallow and wrapped it so the tallow was on top of the meat.
Got it as a bday gift. I think it's fairly inexpensive in the idea that it's not just a rotisserie but also the santa maria style grill.

Do you just put them on the coals? I’ve only used wood chips in a smoker box so far and haven’t figured out how to get it right. Bigger pieces actually seem more fit for purpose.

I've done a lot of wok cooking on my grill, but only ever used the side burner. I find it most effective to have the flame nearly in direct contact with the wok, I'm not sure it would work as well down under the grill and flame spreaders. The grate with the cutout might get you close, but my suspicion is that you'd be better off with a standalone burner like the sort you can pick up in most decent Asian markets. I have one of these as well, and it'd frankly overkill, but a stir fry goes together in seconds :)
Thank you! The top dimensions are about 60" x 30". I found this cover meant for a BGE and table and built mine to fit in the cover.

I have the older model and I love it.
Main invaluable tools are heat resistant gloves, and something to manipulate the charcoal like a rake, or i used some BBQ old tongs, and if you are doing some long smoke sessions getting some type of remote thermometer is also very helpful.
Some things i have noticed that I have found helpful/annoying
-Im looking into potentially some better charcoal baskets for easier 2 zone setup. The ones they give you are ok for briquettes, but some lump can be pretty irregular and the baskets cant fit much most of the time. This probably isnt that necessary, im just banking coals on one side of the grills now and that seems to works fine.
- The center removable portion of the cooking grates pops up pretty easily and can be annoying to clean. I dont use any of the accessories built for it so this is more of annoyance than a benefit to me. I also rarely use the hinges to add things down below. You can buy some other grates that are more simplistic. like this one
-I also some times just use a smaller grate on top of where you would you would usually put the heat diffuser. This is mainly done out of laziness, coals light quicker if you are using the propane ignition source this way, I can get nice and close to the coals for good searing without moving the charcoal grate up a level, and can still cook a decent amount either 2 zone or direct grilling via this method. I just use an old grate from my bullet smoker (i think its the 18inch one)

Yes. Something like this will work. But you’ll have to reapply every so often.

Lots of different brand versions, but they are all the same. I think I only paid about $20 for mine. But well worth $30+. I'd say you would have to spend closer to $100 to get a better one.

I bought this one from Amazon and has lasted me three years so far in WA weather. It's considerably heavier than the Weber ones and fits my Spirit 310 perfectly. There are other sizes available depending on which grill you have.

Super compact, cheap to fill, will last you more than enough on an outing. Not cheap comparatively, but man those disposables suck and the cost of those add up.
I use mine in the garage for a torch heater, and then with my campchef stove when out camping.
