I do that but I use software to make concept maps (which is what you're doing basically). https://cmap.ihmc.us/ is designed for this but there are others.
It is -not- mind mapping. Mind mapping was derived from this and is a much weaker, almost useless tool compared to the original concept mapping.
Concept mapping is great. Once you have a map filled out, the idea is to find more connections. It really helps with understanding the bigger picture.
It's also great and helping you understand the individual links. It is often said that the hardest part is figuring out the linking words.
See, a concept map consists of propositions. <Apple> (is) <fruit>. This one is easy. 2 different concepts linked together. But it gets harder. For example, sometimes the linking word is "moderates" or "mediates" or other more complex things.
I won't go into it too much but it's a great tool for research.
In (somewhat) similar situation, I was able to use this concept mapping software (https://cmap.ihmc.us/) to manage a complex index to a large pile of documents. Not exactly the intended use, bit I was able to make a decision/concept hierarchy with clickable nodes that either opened new documents or sub-hierarchies. Can render out to HTML, PDF, and other formats.
I've used it a lot over the years, it is a program, https://cmap.ihmc.us/cmaptools/cmaptools-download/ and you don't need your own server, you can create an account on their public infrastructure and create a password if you wanted to sync over multiple devices.
I've found it very useful. the alternative I used was free mind, and that had a slightly different take. another great alternative was 'thebrain' but there is a lot of upsell for their professional products....
I think what you really need is this:
https://cmap.ihmc.us/cmaptools/
The only issue is that is a different program but is not difficult to grasp the basics and make a nice diagram, it allows you to do pretty much anything you want (diagram related).
