You should disable unwanted app permission Yes it possible that the dev's could use the mic and storage like google uses your mic to record specific keywords like for instance you are talking to your friend about buying a laptop and you get ads related to laptop so yes it is possible and for storage if you enable storage for Google photos it will start syncing your photos to google cloud then it is used to for face recognition and the metadata of the image is used to find the location of the place the picture is taken etc
In my case i am using crdroid which is a custom ROM with some privacy enhancements like sensor off mode which disables mic and camera and other sensors , and it also has no gapps pre installed and other stuff
You should also install a custom ROM in your device if you have not installed yet

I can really recommend crDroid. Extremely stable, very fast updates and we'll maintained. Compared to LineageOS same stability but faster updates and slightly more features. Really great.
Reminder - there is crDroid https://crdroid.net/hammerhead available for Nexus 5 - Android 11 based. You might want to give it a whirl, nothing to loose. Got mine up on crDroid 6.13 no issues at all. I use Wifi attached bedroom night radio and google phone & maps- works for me. Although - Personally I am also looking at newer phones either the Pixel 4a or 4a 5g both sound like a good deal of phone for the money. Pixel 5 really does hit all the points + some others like wireless charging too. I am personally waiting for the small bugs to be ironed out as well as some other ROM support too - hoping the price comes down just a tad as well.

Its designed to be light, I would give it a try.
if you want to flash LineageOS and then microG, you have to deodex and then patch Lineage - quite a complex process. LineageOS for microG is built with the patch already included.
many others ROMs, including some Lineage based, support microG but vanilla LineageOS is not one or them. Here are some good ones:

Arrow V.11 (as of 09/02/21) is very stable for the Moto G5 Plus (XT1687), and does not consume battery life as quickly as, perhaps the others (e.g., CrDroid's recent mods (08/2021).
- Updates seem to be weekly and well-maintained.
- Have not tried Lineage OS.
- Seems some androids app have difficulty running on Android 8 stock ROM, at this point. Problem resolved after installing an Android 11 mod.
I also have a Nexus 5, but I’m actively using it. z3DD3r on XDA has been providing Lineage OS 17, 18.1 and TWRP Recovery builds for the Nexus 5 for a few a while now. However, since you mentioned not wanting builds from XDA, crDroid is a ROM based from Lineage OS and they have official support for the Nexus 5. Their latest Nexus 5 build is based on Android 11 if I remember correctly.

You should try crdroid it has a no google apps pre installed and a lot of customization options the even have a telegram group For real time support , go for lineage os for pure android experience with no customization , if you have any trouble installing you should go to XDA form
No there is no build available for my device :( but I am using crdroid it is a fork of lineage os it has a bit of customization available I installed it because I was tired of all the heavily personalized ads

I've been using this ROM for a few days (started with crDroid 7.2 and upgraded to 7.3 today) with no real issues so far (except OTA upgrade didn't work, I had to manually reboot to recovery mode and install the image from TWRP).
Android OS 11 itself seems to be using slightly more RAM than Android 10 (0.98 GB vs 0.8x GB reported on Developer options -> Memory -> Memory used by apps), but in total RAM usage it's actually less (right now it says 2.1GB out of 3.0GB average use).
Before when I tried Pixel Experience Plus and AOSIP (both Android 10 based ROMs), I was getting between 2.2 and 2.6 GB average memory use. I have roughly the same apps installed now that I had before, so maybe Android 11 makes a different management of what stays in RAM when not in use or something like that...
So far I haven't noticed any major differences between android 10 and 11, but this ROM seems to be working fine and is updated regularly, so I think I'll stick to this now for a while...

To get google apps, you'd need to use OpenGapps. Don't use anything above Nano, since Nano and Pico are the only stable versions atm
(Personally, I'd recommend Bootleggers ROM, but it's not available for your device)

I have been jsusing using the phone for almost 2 years now and have had similar issues with buggy and laggy software. Flashing a rom does help a lot. I started off with the Pixel Experience rom which worked well for a couple of months and then just stopped turning on at which point I had to then flash another rom namely CrDroid. Haven't had any issues ever since

i checked a couple and there were no system images in the zips, and how does the boot animation get into the rom zip if its not in the source? I just cant find anything, even in an uncompiled state.
You can still use microG. Choose another ROM with Signature Spoofing support, there are a lot of them but that I can reccomend that supports your device is crDroid. Then follow these instructions on the /r/microG wiki to install it with the min microG installer.
If that doesn't work, I reccomend you switch to crDroid, it is based on Lineage and Android 10 and supports the K20 Pro. It defernitley supports signature spoofing, I don't think you're unofficial Lineage ROM actually does unless something happens when you touch on the settings.
