Hyperdock does this; when you mouse over the previews, it shows a semitransparent fullsize preview: <http://cl.ly/4fXR>.
edit: also: you can quicklook windows in Exposé by pressing space while mousing over them.
OS X will remember where you had an application and re-open it on that display.
Check out HyperDock. One of its features is the ability to turn on "Window Snapping". This allows you to drag a window to the top of your display, hold it, and release it to "snap" it to the top and expand it fullscreen. I use it instead of the zoom button because the zoom button isn't really for fullscreening apps (although some apps behave this way). I didn't even know about this feature until it started happening after I installed HyperDock, but it's easily my favorite feature of the application.
A few mac tips,
cmd ` for switching windows in applications Try spaces, if you haven't, it's amazing on a single monitor. Keep mail in 1, itunes in another, chat in a third, and internets in a fourth. Keeping things clean! Take a look at hyperdock, it's everything apple should do to the dock and doesn't, and some other awesome features
Other than that, enjoy your mac friend! I've totally done a 180 on the air, I thought of it as a companion computer, but now I see it can be totally stand alone for 90% of the people out there buying a lappy. Trust me, most people will NEVER utilize a MBP to it's peak, and mac pros...don't get me started, they are great for high end graphics but imacs and MBP's are just as good. The air is more computer than most users need, and it's cheap for what you get (the screen, full size keyboard and the trackpad+aluminum body)
This may be a little more pricey but I use Hyperdock.
It is a dock upgrade in name but includes "Window Management" that does the same things that this other program does.

Those are some of the most essential ones for me.
I'd also recommend HyperDock, which implements Aero Snap, window previews and movement via the Dock, and several other nice features. It is commercial software (the fee is quite reasonable, IMO, considering all it includes), and I've used it for quite some time with no issues.
I'm still using the old launcher, but the + - buttons work just fine to maximize and minimize the window. I also use a program called HyperDock when I'm feeling lazy. Takes Microsoft windows management and ports it over into OS X. Really cheap too! You can check it out here:
I didn't see any mention to this... But I really love Hyperdock. This fixes the fullscreen issue perfectly plus more! Also get iStat pro, makes the menubar very informative!
Click and hold on the Preview icon, Dock Exposé will show you all your minimized Preview windows. Or just invoke normal Exposé and it will show your that along with everything else. You can also just right click on the Dock icon and get a listing of your windows. Or you can use the Window drop down menu for the app in the menu bar.
I like the Dock personally. It must be decent since Windows 7 pretty much ripped it off completely. If you want something like Aero Peak you can install HyperDock.
I never used NextSTEP, but from what you're saying it doesn't sound much different from old versions of Windows with the quicklaunch bar enabled, except NS used a lot more screen real estate to show everything. Reducing the Dock down to nothing more than a launcher and remove all app management would be a huge waste of space and minimizing everything to a separate area on the screen would be yet more waste and create a lot of disorder.

I use both. Instead of sorting by Apps, I use Spaces to sort by what I want to do. I have 2 monitors and 4 spaces. Space 1 is for school - it has a browser open, preview with pdfs of my text books, terminal, and some utilities. Space 2 is for zoning out - it has xbmc, browser. Space 3 is for coding - it has xcode, browser, preview, and a few utilities. Space is for other people. I switch to it if someone wants to use my computer but I don't want them fucking around with my open apps.
I also use a program called Hyper Dock to get the Windows 7 Snap feature and more info from the dock.
