I like iA Writer. It's very bare-bones and has a minimal interface, so you can focus on the creative parts of writing a draft. If I need more formatting options, or other bells and whistles, I move the text into Pages.
To further phormality's suggestion, iA Writer is as minimal as it gets, even including a 'focus' mode. I highly recommend it. I'm not sure how well it would do as a note taking app (I use it for writing and don't know your note-taking method), but for $9, you might want to grab the iOS version first to try it out (only $1) if money is a concern.
iA Writer, sincerely beautiful and exceedingly simple (ie. there are no options to fiddle with) text editor for iOS and OSX. Also supports Markdown formatting, which is the same formatting Reddit uses.
No. Microsoft Word is awful on a Mac. Sincerely. Pages is much easier to use, and has pretty much everything Word has besides the incredible amount of useless features. I only use Pages to format stuff for printing.
Also, Scrivener began it's development on OSX.
I use iA Writer to write and Scrivener to organize/plan. Also use this fancy shmancy timeline maker called Aeon Timeline. Lots of tools.
I compose in a Markdown-special editor (though, thanks to the nature of the format, that's not necessary) called iA Writer. I keep all the notes in a Dropbox directory (though git would work just as well, I use Dropbox to sync all my schoolwork so my phone and other machines can see it too). I usually consume the notes in plaintext form - just in an editor or whatever. If I need to give them to someone, iA Writer can export to PDF or HTML. I guess I just don't mind reading them in plaintext, although I could see how exporting would be tiresome.

Sometimes it helps. I use iawriter - http://www.iawriter.com/mac/ on my mac and ipad. It has a focus mode that shades out all but the last three lines. Supports some basic formatting but if I just want to write, it's my starting point. Once a story gets a bit more convoluted I'll then port it over to scrivener.
I use iA Writer and like it a lot. I usually just email myself the files. I'm probably going to get pages for the iPad so I can store the files on iCloud and access them from computer and iPad, since I already own it on the Mac.
I've been wanting to try Ommwriter, as I liked their old mac app. I'm just really stingy about buying new apps. Both apps have iPad and Mac apps, for easy access across platforms.
