Use libreoffice or use onlyoffice which should be able to handle the passwords. Either onlline (personal, onlyoffice.com) or fat-client based (download onlyoffice desktopeditors and install as deb.).
If you use Nextcloud App Community Document Server, you wouldn't see it. For now, at least.
This is issue with latest standalone OO DocumentServer.
