Check out WriteMapper. It fits a lot of the needs you described. The basic idea is that you start by organizing your ideas visually, and then you click on each "node" and start writing the text.
It's not meant to be the only app you use to write, however. It's meant to primarily be used for organizing and reorganizing your writing, so the workflow is optimized for importing and exporting your text from other apps.
A typical workflow for me using Writemapper would be to use Bear to jot down ideas and keep simple to-do lists. Then, I start a Writemapper file and brainstorm the structure of the ideas, either starting from scratch or importing a markdown file from Bear. Then, after working on it in Writemapper, I export it back to markdown and add it back to Bear or another app to finish it there.
I'm using Writemapper to write a self-help book for younger second-generation immigrants; focus is more about avoiding pitfalls due to tiger moms/dads, professional mentorship, and eventually how to become better parents.
My other writing project is a series of fantasy stories based on jellybeans that I hope to publish alongside a related blockchain project before I graduate.
It's absolutely optional to upgrade to v3, and v2 will continue to be operational, fully functional and available for download from the website, here.

Fyi, the issue is most likely due to needing to reset your license code, and you can find more details here.
You absolutely can take the license code with you if you change macs (or even to Windows, for that matter), and reuse the same license code on your new computer.

On V2, icloud isn’t directly baked into the app, but your work saved as regular files on your system, so you can use any file syncing service to sync files. More details here.
WriteMapper isn’t quite a note-taking app like Bear is, but if your use case is primarily writing (longer-form) stuff, then maybe give it a try for a while and see how it works for you :)

Yes - you can perform the mind map > text document export in reverse as well! This means you can use WriteMapper to re-structure existing pieces of work too.
To do this, from the intro screen, select the “Open” button, then “Import”, and choose the text document file you wish to import. WriteMapper will then parse the document’s contents and group it by its headings, and turning it into a mind map.
Currently, the app can import from Markdown, HTML, DOCX and OPML file formats. More info on this may be found in part 3 of theUser Guide on our website.
The mind map files (.writemap format), called WriteMaps (☞゚ヮ゚)☞, are saved to your device’s filesystem just like any regular file is. So you can use your preferred cloud sync solution to sync these files and access them from any platform WriteMapper is available on. Personally, I want to also say that Microsoft’s effort in encouraging productivity through their work on Inclusive Design actually speaks very closely to my heart. Satya Nadella’s new mission statement for Microsoft is: Empower every person and every organization on the planet to do more. That intent is kind of why I started to work on this app to begin with.
A productivity app, WriteMapper helps its customers reduce the time spent on getting work done, so they have time for other things, be it reinvesting it to make the work even better, or spending time with your kids. I want to help enable people do the things that matter to them in life, and seeing Microsoft leading the way in this regard is tremendously encouraging for me.

I’ve been committed to consistently updating the app to improve upon it, and have been doing so over the past year and a half since the app was initially launched. Thanks for your feedback! Can I check if the app performing differently as compared to the macOS sequences in the introduction video, on the website's homepage? Those were sequences recorded on an actual device, and so they should be functioning at about the same level. This is an Electron app, although it shouldn't be giving you any noticeable lag — if there is, it might be a specific issue you're facing — and if that's is indeed the case, I'll be more than glad to help you further diagnose the issue and recommend possible fixes. :)

You would be right in that the mind-mapping functionality is mostly the same, where you start at one node and branch out with your individual ideas--you won't get too many surprises there.
However, the contents within each node on the mind map can be edited in a distraction-free writing mode, complete with text styling capabilities. So, for people who have writing deadlines, you get the both the speed of using the mind map, and the focused nature of distraction-free writing, rolled into a single, coherent workflow that'll supercharge your writing productivity.
And if I may say so (others have concurred in this thread), WriteMapper is really well-designed. It surely only helps the creative process to look at something of beauty, than not, I think!
