Appdialer by Aleksey Masney for sure. There's a bunch if T9 app launchers out there, many with more features. But this one is my favorite because of the UI and the speed. For me it's been the best at reducing the number of taps it takes to launch any given app.
I've been using the AppDialer T9 widget for years and highly recommend it. Not a full keyboard replacement but works well for launching apps.

That said I will be trying this launcher
AppDialer https://play.google.com/store/apps/details?id=name.pilgr.appdialer.pro
Found this one years ago. Whenever I reset or switch devices this is the first widget that I install. With my 100+ apps this makes it so easy to navigate around the phone.
No folders, rarely using the app drawer at all. I have a T9 App Dialer widget on my home screen, and start all apps from there. Its three clicks at max to open any app or contact on your phone. It doesn't get easier than that IMO.
I'm a big fan of Appdialer. It gives you a T9 keyboard popup, or a qwerty keyboard, that searches your apps and contacts.
The setup I'm using a bit different, as using 2 apps:
- Nova Launcher, and the regular Google Assistant for web search - setup is, that the search bar is down below my "dock", and only one tap away - or use the voice activation.
- For searching contacts and apps, I'm using Nova's swipe up feature set, to launch App Dialer Pro. This then able to customize, how and what to search for.
Have you tried AppDialer Pro ? Not only it can search through apps, it can also search contacts. Also, it has a widget, that allows you quickly search / open any apps / contacts.
I don't think it support searching by color of icon or anything like that. But for simple searching by name, it's pretty great.
The widget for AppDialer. I have a lot on my phone and can launch any app within a couple of seconds

I'd say B for most tasks. Typing on the full keyboard would often feel convoluted, but I suppose it depends. I do use AppDialer in T9 mode all the time, to the point where I haven't really seen my app drawer or dialer for months. As for voice commands, they seem pretty unreliable to me, and you wouldn't want to shout at your phone in public.
Also, when applicable it'd be D) Tasker it.
some apps already do that:
AppDialer for example, is no longer updated (last update in sept 19)
AppDialer X is the updated version (last update in july 22), but it's way too expensive imho, maybe I'll wait for a discount.
the tricky part is to find the sweet spot of how long do you need to support the older version and how much you're gonna charge for the updated one
maybe a discount for those who already bought the previous one.
Yeah, $20 is pretty crazy, but the page for appdialer pro has it mentioned in the description. I'll agree, looks pretty concerning, but it is the same dev.
App Dialer - It let's you access all your apps or even contacts thru a simple T9 numpad or a Qwerty keypad. Make it really easy to quickly switch between apps. I'm so used to it, that opening the app drawer send like a big hassle now.
App Dialer Pro - allows you to quickly search for and find apps and contacts on your phone using T9..... Which is exactly why I prefer this app over Sesame.

I use appdialer pro for quick and easy app and contact search. I used to use sesame but found that to be unreliable plus appdialer uses T9 while sesame doesn't.

It's not exactly what you want, but it can do this.
Personally I use AppDialer in junction FNG this way I can open apps from anywhere without going back to the homescreen. I dont even use the app drawer, except when I forgot about an app.
So, after installing a new app and you open AppDialer, the first icon is always the newly installed app.
For apps & contacts. I use it for apps only. Map it to a button or edge shortcut and you can open it from anywhere. My most used app.
Sesame is good too.
You could also have a look at KISS Launcher
I've been using App Dialer for that type of thing, I think it's a lot easier on my fingers not having to stretch all the way across the keyboard.
I know this doesn't answer your question, but I've been using AppDialer for years and I fucking love it.
Not only does it search for both apps and contacts, but it allows you to use a T9 keyboard (dialer) instead of a QWERTY keyboard. This is the killer feature for me.
Because apps and contacts in your phone are only in the hundreds (as opposed to, say, searching every word in an English dictionary), usually 2-3 taps in the T9 keyboard are enough to find any of them. And the large keys makes it so fast it becomes muscle memory to launch your most frequent apps.
On my Pixel 4 I've just added the AppDialer icon where the classic "App Drawer" icon would be, and that's what I use most of the time (I can always swipe up in the rare even of needing to launch the full app drawer).
Use Appdialer widget on your home screen. You'll never dial from the dialer again. https://play.google.com/store/apps/details?id=name.pilgr.appdialer.pro
There is also a free version if you want to try it out.
I used to use AppDialer Pro ~2.5MB (there's a free version too) and I liked it better than App Swap because I felt App Swap was too bloated if I just wanted to quickly launch apps.
This should get you on your way. Also, be sure to check the weekly Saturday App Appreciation thread over on /r/Android
List made using List My Apps
Appdialer is a staple for me on every device that I get.
Appdialer pro (most underrated app IMHO. You should map it to a key you can activate everywhere and you'll rarely see your desktop)
if root must have: titanium backup pro
99cents great game: Out There
I think it's this one - https://play.google.com/store/apps/details?id=name.pilgr.appdialer.pro
Guess this isn't for everyone, but i've been using this for many years and find it convenient and fast - https://play.google.com/store/apps/details?id=name.pilgr.appdialer.pro
Some I don't see posted often posted:
It's AppDialer Pro: https://play.google.com/store/apps/details?id=name.pilgr.appdialer.pro
I use app pro dialer to search for apps and contacts. It doesn't search for documents however.

This doesn't address your specific request but App pro dialer utilizes T9.

I think I'll try to use T9 AppDialer (Play Store)

You want to launch apps without having to leave the current app - you suggested a long press on the home button... "AppDialer" can do this when set as the assist app.
https://play.google.com/store/apps/details?id=name.pilgr.appdialer.pro
Another option is to place your selected app shortcuts in the pull down / notification area using "Tiles"
https://play.google.com/store/apps/details?id=com.rascarlo.quick.settings.tiles
If you just want an app that you can place shortcuts into, then have a look at "Simple App Launcher" which is part of the collection that includes the well-known Simple Gallery...
https://play.google.com/store/apps/details?id=com.simplemobiletools.applauncher (note: you can customize the colors and perhaps set to launch using a Nova gesture)
Taskbar and Everywhere Launcher are both great too, but these have visible button thingys floating on your screen all the time.
Appdialer Pro. Using T9 to quickly find apps or contacts.
